Greetings!

I'm excited to announce the winners of the Nationwide EMT contest that ended February 1, 2012! This contest taught me alot of things, from a business standpoint: The importance of advertising. The need for a minimum number of submissions. And it has really made me wrack my brain on how to coax recipes from their owners' clutches! I heard from alot of people that they wanted to submit a recipe, but didn't think it was "good enough." Nonsense! Some of the simplest recipes are some of the best, and almost every recipe out there will appeal to someones palate! No more excuses. SEND IN YOUR RECIPES!

Lastly, this contest taught me: I am SOOO jealous! I want to win an I-Pad!!

A new 'do!

You may have noticed ParamedicCooks.com recipe pages got a new 'do. It's not only easier to find the delicious recipes you're looking for, you can interact with and customize the page!

On the left hand side of the screen, under the title ParamedicCooks Recipes, is a menu bar with choices like: Classic, Snapshot, Flipcard, Magazine etc. Click on them to change the page view! My fave is Snapshot, but it only shows the recipes with pictures :)
Featured Chef: John Harrell
 
This month's featured chef is John Harrell, a Paramedic of 22 years and counting! In 1990, he became the first Paramedic EVER in Wayne County, TN. He has worked in several hospital and municipal based services, acquiring experience from Massachusetts to Tennessee and back, and has obtained multiple certifications and degrees in Pre-Hospital Medicine. Nowadays, he spends most of his career in EMS management, education, and writing/consulting for publishers of medical literature.
 
John also happens to hold the esteemed position of being my husband of 13 years! We have an 11 year old daughter, who can already both cook her way around the kitchen, and give a detailed step by step demonstration and description on how to start an I.V.
 
There's no one in the world who is more experienced with my early kitchen mishaps than John. He has been there through all the phases of my culinary progression: Initial disinterest, to burning a few crockpot meals, to serving perfectly golden brown fried chicken that was COMPLETELY raw inside, to watching The Food Network religiously and beginning a vast CookBook collection, to actually beginning to serve up some pretty decent meals...and starting the Website. 
 
His cooking style is messy, but delicious! He has the natural talent to be able to waltz into the kitchen and fix something mouth watering, whereas people like myself still rely largely on recipes. My favorite things he cooks are Shrimp Creole, pan-seared Scallops, Crab boil, Chicken and Dumplings, Grilled Steak with mushrooms and onions, and homemade cat-head biscuits with chocolate gravy.

Q: What is your favorite meal to cook? 
A: Grilled hot wings, but most anything grilled is fun
Q: What is your favorite meal to eat?
 
A: Pizza- Love the stuff. But why pick one favorite? Meals that I don't cook but love-Sushi, duck, and lamb chops
 
Q: Growing up, what was your favorite meal that Mom prepared?
A: Fried Chicken
Q: Where did you learn how to cook?
A: Mainly self taught but influenced by my father and family
 
Q: Do you have a "signature" ingredient and if so what is it? 
A: Dales Steak Sauce-it's a marinade that works great on most any meat and some seafood
 
Q: What is your best tip for eating healthy?

 A: Do what I say, not what I do. Avoid fast foods and use portion control
 
Q: How would you describe your cooking style? 
A: Chaotic and messy, lots of bold flavors and creative combinations but also basic simple comfort foods
 
Q: You're marooned on a deserted island.  What 5 foods would you want with you?
A: Pizza, Cheeseburgers, Rib-Eye Steak, Pulled Pork BBQ, Potatoes...something Green for appearances
 
Q: When you entertain, what dishes are a necessity at your house?
A: Salsa, cheeses, Hot Wings, and Thai Chili Ribs
 
Q: What's your regular comfort meal? 
A: Chicken and dumplings
 
Q: Best cooking tip for a novice? 
A: Cook often, learn the basics, and don't be afraid to try new foods
 
Q: Favorite kitchen gadget/tool? 
A: The right knifes and a dishwasher (mine is named Nichole)
 
Q: Funniest kitchen/cooking incident?
A:  Returning to the EMS station to find the pot of beans I had  left to simmer had scorched and the fire department had set up ventilation fans to clear the smoke but they couldn't clear that smell
 
Q: Favorite Cook Book? A: The  Pillsbury Cook- its old school with lots of good  basic recipes and general cooking information. Alton Brown writes very informative books and I wish I had them all
 
Q: Are there any ingredients that define your cooking? 
A: Yes. Butter and Hot Peppers
