Know what I want to know? What does a truffle taste like? I'm exhausted from the daily grind of living a life that does not include the culinary proficiency of recognizing the taste of a truffle. 
 
I'm told I can buy a can of them for $50.00? Really?!! Hmm, maybe just wondering what they taste like isn't so bad, after all....
 
Know what else I want to know? WHY YOU HAVEN'T SUBMITTED A RECIPE FOR A CHANCE TO WIN A FREE I-PAD?! Sorry I had to raise my voice. Now be a good EMT and go gather recipes! And tell a friend :)

Featured Chef: Eric Cantor
 
Eric is more than just this month's Featured Chef...he is a REAL CHEF!! He graduated from Johnson and Wales University with a degree in Culinary Arts, and has since graduated from Paramedic school as well. After several years of "Cheffing It," in various fine dining establishments, he decided to join the lovely world of EMS, where he happened to spend several weeks as my Paramedic Student. Yep, Johnson and Wales has nothing on me! :) 

To date, Eric is one of my most memorable students. Not just because he had a genuine and dedicated passion for learning everything possible about becoming a Paramedic, but because he cooked me dinner! He roasted a pork loin at home, then brought in all the ingredients for a Cuban sandwich, and took over the kitchen at NBFD Station 6. After grilling, chopping, stacking, mixing his own sauces/spreads, melting cheese, and other showy professional Cook tricks, he presented us with the best sandwich I've ever eaten! I was so distracted by the deliciousness I didn't even get the recipe!

 Ok, only 2 people admit it. But that's enough for me! My beautiful Beef Stew is the winner of a Beef Stew contest that keeps my front door turning PINK. Cook my beef stew with this RECIPE! And, by the way email my husband at jharrell@yahoo.com and remind him to paint my door Pink :)
 
He agreed to the Pink. He just needs REMINDING. Men!

E-Interview with Eric
Q: Where did you learn how to cook?
A: I gained experience from my family, but mainly self-taught until I received my Culinary Degree at Johnson & Wales University.  I then had the privilege and experiences of working at many amazing fine-dining restaurants, country clubs, and hotels that people would dream of dining at.  Through those experiences I gained much of my knowledge about the industry as well.
Q: WHat is your favorite meal to cook?
A:
Made from Scratch Chicken Parmesan with Angel Hair Pasta and Garlic Bread

What is your best tip for eating healthy?
A:
The best tip I can give for eating healthy would be if you are going to set a goal for yourself to actually eat healthy, then stick with your goal.  Sometimes it's tough making a life-change such as from eating whatever you want every day to starting a fix diet, but keep your head up and strive for what you want for your body. 
Q:
How would you describe your cooking style?
A:
I would describe my cooking style as authentic and un-collaborated; meaning that I do not follow recipes (only in baking- and even sometimes not).  I understand how food works, and what type of flavors are out there; therefore I try to experiment with what I know and don't know to create new unbelievable dishes that not only catch the eye at first site, but leave you wanting more after your first bite  


More Q and A with Eric...his answers were so long I couldn't fit them all in the Featured Chef column, but they were so interesting I couldn't leave any of them out!
Q: You're marooned on a deserted island. What 5 foods would you want with you? What would you cook? 
A: Beef tenderloin (known to you as filet mignon or beef tournedos), tuna, any type of potato, rice, asparagus...As for cooking with those 5 items, the creativity would be endless  
Q: What's your regular comfort meal? 
A: Cereal and Ice Cream, but not together...although..
Q: Growing up, what was your favorite meal that Mom prepared? 
A: It would have to be a pastry with spinach, and two types of cheese inside, and parmesan cheese on top---the secret stays with me  
Q: Best cooking tip for a novice? 
A: Don't use one recipe, look at 4 or 5 different recipes for the dish you want to prepare so you can analyze how it's made in different ways.  That way, you can take bits and pieces from many different recipes and create your own original product  
Q: Favorite kitchen gadget/tool? 
A: My knives 
Q: Do you have a "signature" ingredient and if so what is it? 
A: Hmm...I think garlic as well as honey brings out the essence of many extravagant dishes that I create.  Garlic dating back over 6,000 years brings to the table not only pallet pleasing pleasures, but is also used for its medicinal purposes throughout its' known existence.  As for honey, the taste and texture is unparalleled, used for many types of sources in cooking and medicinal purposes as well; an interesting fact as well is that honey is the one ingredient in your kitchen that will never go bad 
Q: Funniest kitchen/cooking incident? 
A: Well it didn't happen to me, but I was there and found it quite hilarious.  One day we had a banquet for one of the restaurants I worked for.  One of the cook's I worked with had the job of making the Clam Chowder.  During the banquet, I went to go try the chowder, and it felt like something was missing; he forgot the key ingredient, the CLAMS!  So the clam chowder was served to the guest without any clams. 
 Q: Favorite Cook Book? 
A: The Professional Chef 
 Q: Are there any ingredients that define your cooking?  
A: No, I enjoy using all ingredients  
Q:  If you were on Death Row, what would be your last meal? 
A: I hope it never comes to that...
