LUNA'S SIGNATURE SALAD
 
12 oz mixed baby greens
¾ cup House vinaigrette (see recipe below)
½ medium red onion, thinly sliced
4 oz Gorganzola cheese, crumbled
4 oz dried cranberries
4 oz caramelized walnuts (see recipe below)
 
Toss baby greens with ¾ cup vinaigrette and
Place on salad plates. Layer red onions on top,
then add cheese, dried cranberries and walnuts
 
LUNA'S HOUSE VINAIGRETTE 
 
2 tablespoons fresh ground garlic
2 tablespoons Dijon mustard
1 teaspoon salt
1 teaspoon pepper
1 cup olive oil
2 tablespoons lemon juice
½ cup white wine vinegar
 
In large bowl whisk together garlic, mustard,
salt and pepper. Slowly add oil, whisking
constantly. Add lemon juice and vinegar; mix well
 
LUNA'S CARAMELIZED WALNUTS
 
1 cup granulated sugar
1/3 cup water
1 tablespoon vanilla
1 pound walnuts, quartered
 
In large sauté pan, mix sugar, water, and vanilla,
stirring to dissolve sugar. Cook over medium heat
without stirring until mixture turns light golden
brown (swirl pan slowly to mix ingredients and
add water if too sticky). Add walnuts, coat
evenly and remove to cookie sheet or cooling rack
 
Yield:  4 servings

Client Spotlight - Egger's Meats

Egger's Meats has been a Spokane tradition since 1952. What makes it unique is the quality and outstanding "over the counter" service. Known for its homemade sausages, hams and bacon, Egger's also offers a wide variety of quality pork and beef cuts. Local favorites are its stuffed pork chops, pork cutlets, porketta roasts and of course the original Kansas City Bacon. Ground beef is so much different than super market ground beef because it is leaner and is the product of fresh beef chucks and rounds...you can taste the difference immediately. Quality has always been the cornerstone of Egger's. The north side store, Wally Egger's Meats, is located at 902 W. Rosewood (just a block north of Francis and Monroe). The owners, Wally and Kathy Egger, carry on the tradition of Wally's dad, John, who brought the unique sausage recipes of his Austrian heritage and his great meat cutting skills and innovations to Spokane over 50 years ago. There are three other Egger stores -located on the south hill, Valley, Deer Park - each owned and operated by relatives of John Egger who learned the trade from him at the first north side store.

Employee Spotlight - Mary Lemon

 Mary has been with Fidelity Associates for over 23 years.  She has worn multiple hats in the agency over the years and is our Chief Operating Officer.  Mary has enjoyed seeing the agency grow over the years and become one of the largest insurance agencies in the Inland Northwest.  She enjoys her leadership role and promoting the "Fidelity Team" concept including helping insure that our team provides exceptional customer service.
 
Mary is a licensed agent who enjoys working with her clients. She has AAI and CPIW designations. She is past president of Spokane Insurance Associates and was awarded Insurance Professional of the Year Award in 2009. 
 
When Mary wanted to become more involved in the community, she went through Leadership Spokane and graduated in 2007. In her personal time, she enjoys spending time with friends and family and especially enjoys her grandkids.  She loves to travel to new places whenever she has the opportunity, especially warm weather destinations. She looks forward to the summer season every year as that is her favorite time of the year. 
Boat Safety Checklist
 
  
Keep this page with your boat, ready for inspection. By using this checklist, or one fine-tuned by yourself, you'll be sure that everything is on board and in good working order. Your passengers will appreciate knowing you're concerned about boating safety.
  • Float plan--let a friend or relative know when you're leaving, where you're going, when you expect to return, what to do if you don't, and a description of your boat
  • Registration certificate or documentation
  • Personal Flotation Devices (wearable and throw able)--USCG approved, good condition, readily accessible, assigned and fitted
  • Fire Extinguishers--right number, size, and class for boat; charged, not corroded, nozzle clear, bracketed, readily accessible
  • Visual Distress Signals--current dates on flares, proper number, batteries good if lights or EPIRB
  • Anchors and Line--adequate anchor for bottom, adequate line for water depth
  • Bilge device --bilge pump operable, alternative bailing device available
  • Watch or clock-operable
  • Bright flashlight or searchlight
  • Navigation lights --tested and operable, spare bulbs
  • Batteries--fully charged, encased in plastic boxes or terminals covered, securely fastened down
  • Sound-producing device--horn, whistle appropriate for boat
  • Alternate propulsion--paddle or oar
  • First Aid Kit
  • Tools, spare outboard prop and lock nut
  • Compass
  • Sunscreen
  • Weather Radio

Karen Munsey, Mary Lemon, and Rose Chambers have been elected officers for the upcoming year for Spokane Insurance Associates.  Karen and Mary are board members and Rose was elected secretary.
Spokane Insurance Associates is the local chapter of NAIW (International). Leadership development is an integral part of NAIW (International)'s perpetuation of the insurance and risk management industries. NAIW (International) is recognized for the development of leadership skills that members utilize within NAIW (International) and in there professional careers. The organization provides a variety of educational programs designed to provide training in both personal and professional development as well as continuing education.
