Bruschetta Peperonata
Makes 12 servings
 
Ingredients:
1 Loaf Rustic Bread (or any type of dense bread)   
4 ea Red Bell Peppers
4 ea Green Bell Peppers
1 cup Pitted Kalamata Olives
1 cup Feta cheese, diced
3 Tbsp. Olive Oil                     
2 Tbsp. Balsamic Vinegar
2 Tbsp. Fresh Basil, chopped salt and pepper taste    
                             
Directions:
Slice bread approximately 1 inch thick, brush lightly with oil.  Toast on a grill or in oven until crisp.  Set on plates or service platter.

Roast red and green peppers in the oven under the broiler until (charred) black on both sides.
 
Remove from broiler and place in plastic zip-top bags to allow to sweat for approximately 5  minutes.  Remove peppers from the bag and the skins should easily peel off exposing the flesh of the vegetable.  Once peeled, seed and julienne the peppers.
 
Heat a sauté pan with the olive oil.  Place the peppers in the heated oil to sauté for 2 minutes, add the olives and toss for another 2 minutes.
 
Lower the heat to medium and add feta, and balsamic vinegar, then toss again for 2 minutes.
 
When all ingredients are combined, use tongs to place a portion of the mixture on each piece of toasted bread. Drizzle a little of the juices from the pan over all the bread and add salt and pepper to taste.   Garnish with fresh basil, serve immediately.

Employee Spotlight - Kim Krogh

Kim KroghAccount Executive who works with both Personal and Commercial Insurance and specializes in accounts that are in need of Professional Liability or Errors and Omissions Liability coverage.  Kim has been in the business for over 25 years, starting as a typist with a local insurance company and moving through the ranks at various insurance agencies.  In 1996 she joined her mom's agency, Jan Krogh Insurance in the Spokane Valley as her business partner.  In 2001 Kim and Jan merged with Fidelity Associates and Kim has found her home.  
 
In Kim's spare time she travels, scuba dives, and enjoys spending time with family and friends - especially over a good glass of wine.  She is passionate about giving back to the community and sits on several community boards and committees.   Currently she is involved with the United Way on their Allocation Panel.  Kim feels that the best thing about being involved with the Allocation Panel is getting to know agencies that you might not know exist in our community and about the amazing work they do with our fellow community members, neighbors and possibly co-workers.
