Orecchiette, or "Little Ears", is a traditional Pugliese pasta that is perfect for summer-time dishes. Orecchiette is customarily shaped by manually wrapping a pasta disk around the tip of the thumb and then letting the pasta dry. This week at Panzano we are featuring two distinctive orecchiette from two different makers. To start, we have the traditional orecchiette by Pastificio Marella, a family run pasta company based in Puglia. Great Whites!!!
There is a lot more to Italian white wine than Pinot Grigio. From the fantastic white wines of northern Italy to the Central whites full of rustic charm to the south and the islands, there is something for every palate. For the contingency that exclaims, "I only drink red", we strongly urge you to reconsider. Why?...living in New England we have the bounty of some of the best seafood in the world right outside our doors. Like many, we enjoy oysters on the half shell...now try pairing a red with them; not so easy is it? Sure it can be done, but it's challenging and sure, beer will work but we like leaving as much room as possible for all those oysters. This is where white wines truly shine. The minerality and acidity bring out the briny sweetness of oysters and most other seafood to boot.
