| Gerson Basics Workshop October, 2010 (Continued) | Velocity AV Services company provided image magnification for the food preparation and other demonstrations. Because of the high interest in the Caregiver Certification Program, we added an overview of the phases of this program where we also answered interested participants' questions.
Two patients' testimonials were viewed as video presentations. In the future we want to provide more information online through video, webinar and other multi-media presentations so that more people around the world can have access to the information and demonstrations. We are so fortunate to live in this day and age where information can be communicated through a variety of technology!
We added the food mill to the Gerson store items that can be purchased at the workshop, and it was a popular item. As we respond to participant feedback, we are able to continuously improve the quality of the workshop, the information and products we make available and the content of our lectures.
With the help of Gerson Institute Staff and over 30 volunteers, we provided 100% organic Gerson meals (breakfast, lunch and snacks) and fresh juices for participants, as well as environmentally conscious workshop materials and supplies. Preparation for the Gerson Basics Workshop begins months in advance. We are deeply grateful for the hours of work our volunteers offer that make this event possible.

| Don't Forget The Watercress |
While it is important to eat a wide variety of leafy greens, most of us have that one go-to favorite that we just can't get enough of. This could be a leafy green that not only packs a healthy punch, but has a taste to go well with a number of different recipes. Recently kale, the easy to grow and abundantly healthy vegetable, has been praised as a superfood, but for many it has a taste that doesn't quite satisfy your buds.
Perhaps a better tasting, though similarly vitamin-packed plant worth mixing into a few recipes is the often over-looked watercress. Monica Reinagel, M.S., a nutritionist, chef and blogger says "a cup of watercress contains plenty of vitamins A and C and boasts an entire day's worth of vitamin K, a nutrient that helps keep your bones strong and your heart healthy -- and just four calories." While more research will be needed, a recent study also showed that consumption of watercress might help reduce your risk of breast cancer, thanks to a compound that inhibits a protein related to tumor growth. And if this isn't reason enough to get some watercress in your diet, it also acts as a mild diuretic,"helping to expel excess fluid if you're bloated."

| California City Says Stop Dental Amalgam Immediately | |
Costa Mesa, California has become the first city in the United States to call for an immediate end to dental amalgam, the controversial filling material that is 50% mercury. Voting 5-0 on 19 October 2010, the Costa Mesa City Council adopted the resolution sponsored by Councilman Gary Monahan that (1) calls on federal and state agencies to eliminate amalgam, (2) asks dentists in Costa Mesa to cease using mercury and switch to non-toxic alternatives, and (3) requests that the other 33 cities in Orange County join Costa Mesa in opposing dental mercury.
While, as a resolution, it does not actually ban amalgam, it is an important step toward ending this health and environmental scourage. "There are so many alternatives and I can't understand why we're putting this in our mouth," explained Councilman Monahan. "[I]t's incredibly dangerous to people getting them and to the environment."
The watershed Monahan Resolution is the first success for Californians for Green Dentistry, a new project of Consumers for Dental Choice. Californians for Green Dentistry has a trio of dedicated leaders: Director Anita Vazquez Tibau spearheaded the strategy leading to this resolution along with dental hygienist Marisa Russo and naturopath Kristy Mills.

Recipe |
Roasted Celery Smash
- 2 lbs celery root- cleaned, peeled, and cut into large dice
- 1 lb day old baked potato- peeled and cubed
- 4-5 large garlic cloves
- 1 cup packed cilantro leaves
 - ½ cup fresh lemon juice
- 1 ½ tsp honey
- ¼ cup apple cider vinegar
- ½ cup flax oil
- Preheat oven to 350 degrees.
- In a small pan with a lid, roast the celery root in the oven with about one and a half inches of water on the bottom of the pan. Roast for approximately one hour or until celery root is tender.
- If you don't have day old potatoes, bake potatoes and cool them before trimming off skin and cutting into cubes.
- Add the celery root and potatoes with all the ingredients into a food processor or Cuisinart and puree.
