Combat the cold. Try this winter warmer tonight....
Thai Chicken & Peanut Stew - serves 6
Ingredients:
1 lb Diced chicken thigh 1 Green pepper diced 1 oz Vegetable oil 1 Red pepper diced 1/2 tbsp Minced garlic 1 Onion diced
1 lb Blanched peanuts 4 Ltrs Water
1 oz Chicken base 1/4 tsp cracked chili
Salt & pepper to taste 1 cup Smooth peanut butter
Directions:
1. In a small stock pot, heat oil, saute vegetables for 2 minutes.
2. Add diced chicken thigh & peanuts and saute.
3. Add water, chicken base, peanut butter & spices
4. Bring to boil, then let simmer for 20 minutes.
