2012 Greenacres Women's Fun League

Please join us every Tuesday for a fun round of golf and prizes.  Depending on your schedule or whatever your skill level is, you can choose to play 9 or 18 holes on any given Tuesday.  If you are looking for an enjoyable non-competitive league to play in - this league is for you.  We welcome all levels of golfers and you are welcome to join us as a group or a single looking for a golfing buddy. It's a perfect place to network with your fellow golfers.

Spike Lounge and Grill

Recipe of the Month:    

Pork Meatball Banh Mi  -4 servings

 

Ingredients:

Hot Chili Mayo:

2/3 cup of mayonnaise         

2 green onions, finely chopped

1 tablespoon hot chili sauce - sambal olec

Meatballs:  

1 pound ground pork              

4 garlic cloves minced   

1 tablespoon fish sauce         

1 tablespoon hot chili sauce

1 tablespoon sugar                   

3 green onions, finely chopped

1 teaspoon coarse sea salt    

1/4 cup finely chopped cilantro

2 teaspoon black pepper  

Sandwiches:  

2 cups julienne carrots         

2 cups julienne daikon

1/4 cup sugar                          

1/4 cup unseasoned rice vinegar   

1 tablespoon sesame oil        

1 teaspoon coarse sea salt   

4  10 inch-long baguettes     

thinly sliced jalapeno chilies

16 large fresh cilantro springs

2011 Greenacres Tuesday Fun League Update

Tuesday Ladies Fun League Wrap-up Party

 

We would like to thank all the ladies that attended our end of season wrap-up party.  Those that were unable to attend missed the party of the year filled with prizes and wonderful appetizers put out by our Head Chef Wade Siever and the kitchen staff.  A special congratulation to Arlene Yoshida who received a free Fun League membership for 2012 as she managed to play every week possible - a perfect 20/20!  We also ran a draw for another 2012 membership in which Carol Bruce was the winner.  

 

We would like to thank all the ladies for making revival of the Fun League such a success. Hope to see the same faces along with many new ones next year. 

 
F & Beverage Corner - Spike Lounge & Grill  (continued)
Pork Meatball Banh Mi

 

Preparation:

Hot Chili Mayo:

       Stir all ingredients in small bowl. Season with salt.  

Meatballs:

       Line rimmed baking sheet with plastic wrap.  Gently mix all ingredients in large bowl.  Roll mixture into 1-inch meat balls.  Arrange  on baking sheet.    

Sandwiches:

       Toss first 5 ingredients in medium bowl.  Let stand at room temperature 1 hour, tossing occasionally.  

       Preheat oven 300 degrees F (175 degrees C) Heat sesame oil in large skillet over medium-high heat.  Add half of meatballs.  Saute until brown and cook through, about 10-15 minutes.  Transfer meatballs to another rimmed baking sheet.  Place in oven.  Repeat with remaining meatballs.  

      Cut each baguette horizontally in half.  Spread hot chili mayo over each half.  Arrange jalapenos, then, cilantro on bottom halves.  Fill each with 1/4 of meatballs.  Drain pickled vegetables; place atop meatballs.  Press on Baguette tops.
