Summer is finally here! The bad weather has seemed to have finally passed and the sunshine is here and hopefully here to stay. Now that your clubs are out of the closet, it's time to put them to good use out on the golf course.

Food & Beverage Corner - Spike Lounge and Restaurant
Recipe of the Month: Greenacres Amaretto Crème Brulee Ingredients: - 2 cups of heavy whipping cream
- 2 tablespoons Amaretto
- ½ teaspoon almond extract
- 4 large egg yolks
- ½ cup granulated sugar, plus 4 to 6 tablespoons for topping
- Sliced almonds, lightly toasted, optional
- Fresh mint, optional
Preparation: 1. Preheat oven to 350° 2. In a saucepan, bring cream, Amaretto, and almond extract to a boil 3. Meanwhile, whisk egg yolk with ½ cup granulated sugar. Slowly whisk the hot cream into the egg yolk mixture until well blended. Place 6 to 8 shallow individual 6 to 8 ounce baking dish in a large baking or roasting pan. Pour cream mixture into the baking dishes. Pour boiling water into the baking dish to about halfway up the small baking dish. Carefully place the pan in the oven. Bake for about 20 minutes, or until the centers barely move. You may have to adjust baking time, depending on the size/depth of the baking dishes. 4. Cool the Crème brulee then chill for about 4 to 6 hours or overnight. 5. Sprinkle each crème brulee with 2 to 3 teaspoon of sugar. Carefully torch to melt the sugar, moving and taking care not to burn. Or, place under the broiler, turning and watching very closely, until sugar turns darker brown, about 1 ½ to 2 minutes. A cooking torch is good to have if you make this often. You have much more control on melting the sugar, which forms the famous crust. 6. Top each crème brulee with a sprig of mint and sliced toasted almonds, if desired. Come and check out our new wine list in our lounge. Choose from some of our new wine in stock - Oyster Bay Chardonnay Orofino Vinyards Single J Lohr Cabernet Sauvignon Matchbook Syrah Also...new on our tap.... Stella Artois Reservations: Please call Spike Lounge & Grill at (604)-273-1121 ext. 107

Update
Our Tuesday Fun League revival has been a huge success with new members popping up every week. Although the weather hasn't been the greatest of late, the ladies are always smiling and happy to hit the links.
Winners of our on course contest have included Chris Borody, May Oshiro,Bonnie Koyama and most recently Elaine Roker for her brave second shot on #6 which ended up approximately 6 ft from the water's edge on her second shot.
We'd like to thank all the ladies that have made it out so far and we look forward to the rest of the summer.
