This is Mosti Mondiale's fresh juice from Chile and it is one of their best products! Since it is 100% fresh juice, it is only available once each year after the harvest in the Southern Hemisphere. Our customers that have made wine with this product have been after me to bring it in again, so we are.
Since this is fresh juice, it arrives refrigerated and must be picked up on the day it arrives. It is pre-innoculated with yeast, so as soon as it reaches 46 degrees, it will start fermenting. Like the fresh grapes, it will not come with any additives, but it will be balanced for sugar, acid and pH. In essence, all you have to do is take it home, open it up and let it start fermenting.
For those of you that pay attention to the WineMaker Magazine awards, you will notice that the number 5 wine from 2010 was the Chile Fresco Carmenere from this line. Joseph received a gold medal for his 2007, while I received a silver medal for my 2008 vintage.

Corks
In case you haven't noticed, not all corks are alike. We sell a wide range of corks that vary in size and protection for your wine. #8 and #9 are used for the standard wine bottles. Generally, we recommend the #8 corks for the 375 ml bottles (splits) and #9 corks for the 750 ml and 1,500 ml bottles.
When choosing a cork, the most important question is how long do you plan to age the bottle? If you plan to drink the wine within 2 years of bottling, any of the corks we sell will work for your needs. On the other hand, if you plan to age your wine longer than 2 years, you need to look at the Perfect Agglomerate cork, Altec cork, bi-disk cork or natural cork. You will get at least 5 years out of the Perfect Agglomerate cork and Altec corks and 5-10 years from the bi-disk and natural corks.
I would hate to see you lose a bottle aged wine due to the cork leaking. I will also add that we have sold well over 1 million of the perfect corks without a single reported incidence of leakage. The one drawback to these corks is their density. Even though we include them with our starter packages, they can be difficult to insert with a hand corker if you don't follow our video instructions. They can also be diffcult to remove with some of the corkscrews on the market. |

Krystalbloc
Mosti Mondiale is now including "KrystalBloc" with most of their white wine kits. This is a chemical to retard the formation of tartaric crystals (wine diamonds) in white wines. Mosti is working on new instructions that tell you when to add this item, but a lot of you have already received wine kits with KrystalBloc and don't know what to do with it.
KrystalBloc is added just prior to bottling and it can be added before or after you filter. If you add it prior to filtering, do so at least 3 days prior to filtering; otherwise, the filter will just strip the KrystalBloc out of the wine.

Discontinuing the True Brew Beer Kits!
Due to lack of space, we are discontinuing the True Brew Beer kits. We have heard nothing but good things about these kits, but the continuing demand for more products related to kegging and all grain brewing has forced me to create more space in the store. As such, these kits are on close out until they are gone.
Please note that we will continue to stock the entire line of the Brewer's Best beer kits. With their 40 different beer kits to choose from, I feel confident that we have a beer kit for most tastes and, if not, Brian will be happy to create a recipe for any beer you like! |
