Acid Testing

The tart and crisp sensation on the tongue when tasting wine comes from the acids present in the wine.  Fruits contain many types of acids in varying amounts.  The fermentation process creates many more.  However the principal acids found in grapes are tartaric and malic and other fruits principally contain malic and citric acids.

Wines that have a low acid content are susceptible to bacteria growth and spoilage during storage.  They will not age well and often taste flat and insipid.  Too much acid can inhibit yeast growth and be so tart as to be undrinkable.  A wine like this may require so much aging that by the time the acid has smoothed out, it is past its prime and no longer drinkable.

As fruit ripens, the sugar content increases and the acidity will decrease.  This balance will change from year to year as the growing conditions change.  The goal of the winemaker is to balance the acid content with the residual sugar and the alcohol in the finished wine.  By testing and adjusting the acidity and keeping good notes, a great wine can be repeated and a not so good wine can be improved.

Only 5 days left to order your Fresh Grapes
 
For those of you in the local area, we are putting together a fresh grape order for the fall.   I will be getting the grapes from F. Colavita and Son out of California.  They have an excellent reputation for delivering high quality grapes.  We don't have an exact cut off date yet, but we expect the grapes to be delivered around mid-October.  The California harvest will be late this year.
 
Grapes will be sold by the lug which is 36 pounds.  3 lugs will make 5-6 gallons of wine.  We are anticipating delivery sometime in mid-October.

New Web Site, (finally)!
 

After almost 1 year of anxiety, it appears our new web site will be up by the end of September.  We have tried to maintain much of the customization from the old site, but there will be significant changes to go with the enhancements.  Initially, we will be missing some of the content from the old site, but over the next several months, I will be reloading the missing content and adding more.

 

The new site will have an up-to-date ordering system that will be fully integrated with my credit card processor, PayPal and Google Checkout.  This should make ordering easier and eliminate the problem with mis-typed credit cards.  All credit card processing will be handled by a third party, so I will not have access to your credit card information unless you call me and ask me to keep it on file.  This step is being made to increase your security.

 
Although we have tried to test every aspect of the system, I will be greatly surprised if everything works 100% correctly on day one.  For that reason, we will be providing an email address to our web developers so that you can advise them of any problems you encounter.
 
As soon as the new web site is up, I will send you and email so you can take a look at it.
