What is the value of the BCA?

 

I have always found the BCA to be a prestigious professional organization. As a result of my membership, I am able to network with peers, and learn from the diverse community of chefs that participate.  In light of this interaction with accomplished professionals, I learn new things about food and wine, new approaches, new flavors. It's very valuable to me as a chef and a foodie.

 

How did you get into the culinary industry?

 

I began my career while still in high school. I attended a culinary trade high school in western New York where I really started at the bottom and worked my way up. I opened the restaurant at 6:00 am every week day and served Breakfast and Lunch to local businesses and members of the local government. It was grueling and rewarding at the same time. I received a lot of experience and know-how during that time.

 

What lessons would you like to impart to those interested in a career in the culinary industry?

 

Above all else, that cooking is about love. It comes from the heart and the soul. Your guests understand that when they experience your food, so don't fake it.  Personally, I love the thought of creating a dish for all different kinds of people. People who have come together for whatever reason, and I'm a part of that event. My contribution needs to be created with care. I like  to treat everyone like family and always cook with love.

 

What are your plans for the future?

 

 My plans for the future are to learn more about the slow food movement. With the launch of our new restaurant The Wave Kitchen & Bar at Costa d'Este Beach Resort, we have taken the initiative to support as many local farmers as we can. We are thinking local and acting local to offer the best and freshest available. I hope that in this effort,  I can influence as many young chefs to buy locally too. Support your neighborhood, and they'll support you. 

 

What was the last memorable meal you enjoyed?

 

Garlic Saut�ed shrimp with stone ground grits Vermont white cheddar/ black eyed pea fritter.

BCA Global Introduces a New Facebook Style Community for Members

 

BCA is proud to introduce a new Member feature with the introduction of our new "Member Community". Starting in mid-June, Members will have access to a host of new social networking content which will allow them to connect, expand and promote their current work. Our Program Consultant, Jonathan Wu, promises a "virtual space for members to socialize and network within a public arena, while presenting their own private profile." As a part of the BCA community, members will have easy access to other members within the culinary and hospitality industry, while retaining the ability to personalize their profile and connections as they see fit.

My Profile

 

It is now possible to present photos, contact information and contacts/connections within a Member profile. One of the aspects of the Profile page is a newsfeed in which a member can keep track of their connections' by perusing through their connection's news. 

 

Furthermore, within one's profile, there is no limit to the amount of photos one wishes to store.  

 

Circles and the Community Forum

 

Circles exist as a way for Community members to expand and present their personal profile into a group setting. Our Social Media Administrator believes that "Circles will reflect the social reality of the culinary and hospitality culture and allow members within specific groups to promote and share their specific ideas."

 

The revamped Community Forum will exist as an area where Members can post more informal content, and make connections while discussing topics important to the culinary and hospitality industry.

 

Member Search

 

The new search function allows members to find other members based on: Region, University Attending, Major, Services Provided, and Primary Client Base. With this ability, BCA expects members to be able to connect on a new level, and create resources for shared interests such as book clubs, frequented restaurants or innovative culinary techniques.

BCA's JWU Chapter Has Another Active Semester

 

The semester started off great with the chapter's participation in JWU's Family Weekend Parade.  An excellent presentation by Angelique Kingston, Seponono Motloenya, Frederick Howard, Abene Tulani, and Halimah Muhammad won the school spirit award and $250.  Congratulations presenters!

 

JWU Street Clean

The most important aspect of BCA Global is its members enthusiasm in giving back to the community.  Under the guidance of Mr. Barbosa, JWU held their annual street clean.  In addition to improving the environment, the fair brought the students closer to members of the community with a bbq for all involved.

 

While the JWU students are hard workers, they are talented as well.  In December, their open mic night featured poetry readings and musical performances from Angelique Kingston, Calvin Cross II, Damont, Phoenix Smith, Lafayette Shackelford, Julie Reno, Alyrae, and TJ Delle Donne.  Founding members Eric Adjepong, Joe Marshall, and Asia Hunter also attended as speakers for the event.  Of course, the night also featured a unique dining experience.  A buffet featuring Spanish and African American delights was prepared and served by Adam J. Joseph, Joshua Murell, Phoenix Smith, Alexandra Puckerine, Lafayette Shackelford, Abena Tulani, Halimah Muhammad, Jennifer Danaux, Sharon Belcarris, and Kyle Devlin.

 

Members also displayed their culinary and hospitality skills by preparing food and catering events for the annual ICC staff overnight retreat, EUHOFA, and a Quincea�era for four high school students.

 

Le Cordon Bleu 


BCA Le Cordon Bleu Shows Their Entreprenurial Spirit

 

New York Trip

Members displayed their entrepreneurial spirit with several successful fundraisers.

 

In October they raised over $500 for the Susan G. Komen Foundation for breast cancer research with a cupcake sale.  Money was also raised for Ronald McDonald house charities by selling chocolate.  The expenses for their trip to New York were covered by running a successful bistro. 

 

 

The culinary talent of the chapter was displayed during the Gift for Life Foundation Fundraiser.  They cooked and served the food at the event which raised money to fight kidney disease.

The chapter continues to further BCA Global's mission of promoting the field of culinary arts to students.  The Beaus of the Jack and Jill country club were taught to cook dinner for their ladies by Chef Bryan Currie.  Young children were also introduced to the field during the BCA JR Boo! Bash, where they were treated to food demonstrations, games, and a pumpkin carving. 

 

Next up for the chapter is the Starlight Foundation event on June 11.  

 

 

Culinary Institute of Charleston 

BCACIC Wins the Silver Medal


Congratulations to BCACIC for winning the silver medal in the Culinary State Competition!  Chapter President Ulfet Ralph serves as team captain and prepared an appetizer based on Chef Kevin Mitchell's recipie.  Lemuel Reina cooked a classical dish from Escoffier. 

 

BCACICMembers also gave back to the community by volunteering at the Lowcountry Food Bank, which feeds the poor and hungry of the coastal counties of South Carolina.  Food Bank employee Chef Kim was very impressed with their professionalism.

About BCA Global:

 

BCA Global is an educational and networking non-profit organization for hospitality and food service professionals. Established in 1998, its mission is to create exposure and provide educational and professional opportunities for minority culinary and hospitality professionals.

 

The association provides quality educational and employment resources, job coaching, mentoring, placement assistance, and networking support. Additionally, BCA Global exposes inner-city high school students to the culinary arts through a series of workshops that serve to introduce culinary arts as a viable career option.
