Hello from 4 D Acres
Summer is here and with it is the heat. The weather in June was crazy, some days we had jackets on and others were just plain hot. In this part of the state we also have high humidity making a hot day feel even hotter. We drink plenty of water as it seems to just run through us on those days.
The second hatch was not very good - only 3 chicks hatched and we unloaded the incubator the end of June. We will be opening the unhatched eggs to see if we can determine as to why our second hatch was not what we were expecting.
We hope you all had a happy and safe 4th of July celebration. We certainly did. Our two sons, a couple that we have been friends with for over 20 years and their son, had dinner together on the 3rd then we went to Paola to watch the fireworks.
Dinner consisted of grilled chicken halves, ours of course, homemade potato salad, Texas hash browns, cucumber/onion salad, sliced fresh tomatoes, corn on the cob, broccoli salad, deviled eggs, and the best strawberry/blueberry cheesecake we ever tasted. Our friend Dawn did a great job on this desert - she brings the most fabulous deserts every year. Our thanks and hats go off to our military/veterans that make this holiday so enjoyable. |

Recipe
Italian Meatballs 1 lb ground emu 1 Tbs. minced dry onions 1/2 tsp. salt 1 Tbs. coarse dried parsley flakes 1/4 c. grated Parmesan Cheese 1/4 c. emu egg (1 chicken egg) 1/8 tsp. Italian seasoning 2 cloves garlic, minced 1/8 tsp. ground black pepper 1/3 c. plain bread crumbs In a bowl add all ingredients, mix with two forks until blended. Form 1 inch meat balls and place on a non-stick baking sheet. Bake at 325 degrees for 18 - 20 minutes. Serve with favorite sauce over pasta. Makes 38 - 40 meatballs.
