The picture at the right was taken by our local newspaper last year on the farm tour. The spring Miami County Scenic Farm Tour, of which 4 D Acres is one of ten stops, will be held on May 8 and 9. If you would like a brochure highlighting the stops and a map of this self-guided tour of farms in Miami County KS either send us an email or give us a call and we will place a brochure w/map in the mail to you.
We would truly enjoy having you as our guest on the farm. On this tour you will have the opportunity to learn about the emu operation, raising of free range frying chickens and also meet Sambo our guard llama. Emu chicks should be hatched out by then and our baby chickens will have arrived so bring your camera. You will want to bring your cooler as well because, we will be selling frozen meat and emu oil products.
We loaded the incubator with eggs this past month and the projected hatch date is May 1. We delayed the hatch of the emu chicks this year along with the arrival of the baby chickens as Dee is to have surgery shortly after the farm tour. We are both looking forward for that to be over and for her to be on the road to recovered. No cards please but your prayers are always welcome. During her recuperation we will put Mike's dad and aunt in a care home as Dee will be unable to care for them for six to eight weeks.
On a typical day for Dee at 4 D Acres; she makes breakfast for the elders, then there are chores to do such as feed and water the emu, chickens, llamas, check for emu eggs during the winter time, mows in the summer, takes care of Mike's dad (age 88) and Mike's aunt (age 91), plus house hold daily chores (meals, laundry, etc).
A typical day for Mike is filling and shipping orders, traveling to farmers' markets and shows, writing the newsletter, various organizational meetings, speaking engagements about emu, bookkeeping for the business, designing marketing materials and even fixing a meal now and then. He is currently the Miami County Kansas Farm Bureau president and is a member of several community and state wide organizations.
Both of us do help each other so that the farm and business continues to run smoothly.

Winter Pictures
Here are a few pictures of our emus in the snow this past winter. You can see the shelters for them in the middle picture but they prefer not to use them unless the wind is blowing hard. Blue is our farm mascot and travels with Mike for education purposes.

Recipe -
EMU FILETS W/PEPPERCORN SAUCE
2 emu fan filets
1/4 t salt
1/4 t coarsely ground black pepper
1/2 c fat free beef broth
1 t olive oil
1 c minced shallots
1/2 c cognac
1/4 c Dijon mustard
Cut fan filets in half, making 4 portions of at least 4 oz each. Sprinkle emu filets with salt and pepper. Heat oil in a 9 inch cast iron skillet over medium-high heat. Add filets; cook 5 min on each side or until desired degree of doneness. Remove filets from pan, keep warm. Add shallots to pan, saute for approx 45 sec, add cognac. Cook another 15 sec. Add broth and mustard, stirring well. Reduce heat, cook 2 min stirring constantly. Serve filets with about 2 T sauce with each filet.
