We finally have our first egg of the season! The first egg was laid on December 4, 2009. Several other hens have now followed suit. Soon all hens will be busy producing for the spring 2010 hatch.
We are asked frequently if the emu eggs are edible and the answer is "Yes". On average one emu eggs equals about 10 chicken eggs. They have a milder taste than a chicken egg, and are excellent in baking or for making an omlet because they will add fluff to your food. You can hard boil an emu egg, just set your timer for 90 minutes. Then you can make a "few" egg salad sandwiches.
The empty shells are used in various crafts. Some will engrave the egg, as the outside layer is green, then a light blue layer, and the final layer being white. A Dremel tool or a high speed engraver is used to carve landscapes, animals, portraits and other designs into the egg. But if you are a painter the emu egg makes an excellent medium for your talent. Other uses for the emu egg shells are jewelry boxes, a shadow box, or the broken egg shell pieces can be used in a mosaic. You are only limited by your imagination on the many uses of these beautiful eggs.
