Cherries
Traverse City just finished their Cherry Festival. According to an October, 2009 article in the Leelanau Enterprise, Leelanau County comes in second to Oceana County for MI cherry production.
When I was growing up, one of my friend's mother made cherry pie from scratch. Tart cherries. After eating her pie, I could no longer go back to cherry pie filling from a can. Since then I have found many ways to eat tart cherries.
Here is a recipe from our neighboring county of Benzie. And if you go to Beulah, stop by the Yarn Market and tell Michelle I said "hi."
Beulah's Cherry Hut Tart Cherry Muffins
Before you start, please note that this recipe makes four dozen
muffins. That's a lot of tart! 6 cups
flour 1 1/2 cup sugar 3 Tbsp baking powder 3/4 tsp.
salt 2 Tbsp. cinnamon 3 eggs, beaten well 3/4 cup oil 3 1/2 cups milk 4
cups tart cherries, pitted and chopped Mix
wet and dry ingredients together. Add cherries. Pour into muffin pans
with paper liners. Place 1 Tbsp of topping mixture (recipe below) on
each muffin. Bake at 350 degrees for 18 minutes. (Makes 48 muffins. ) For the topping: 1
1/2 cups soft margarine 1 Tbsp. cinnamon 2 cups brown sugar 3 cups flour Beat with hand mixer
until moist. |
