The Best of the Best
At the end of both the Culinary and the Baking and Pastry programs at OCI, the students have the opportunity to really show off the skills and techniques that they've acquired in their time here. On the culinary side, the students take a class called "Culinary Artistry" and the Baking and Pastry students are required to complete a plated desserts project. Below are descriptions of each project as well as links to photo albums on our facebook page that were taken of the most recent projects.

~ Culinary Artistry ~
All culinary students, whether enrolled in the Culinary Arts Diploma or Culinary Management Degree program, take a month long class called Culinary Artistry in the third and final term of the culinary program. Here is the class description:
"Students in this class will have the opportunity to develop skills in advanced culinary theory, technique and plate presentation. Special emphasis is placed on plate composition and flavor techniques. The lab time will be devoted to advanced meat, game and seafood fabrication and utilization, with an emphasis on proper execution and plating for find dining."
Students in this class have worked with duck, lobster, rabbit, and other complicated, more expensive proteins, and learned how to utilize as much of the animal as possible to execute beautiful and flavorful dishes of their own creations.

~ Plated Desserts ~
All baking and pastry students, whether enrolled in the Baking and Pastry Diploma or Baking Management Degree program, are required to complete the "Menu Project." Students are required to create and execute desserts in four categories: fruit, chocolate, pastry, and custard. Production is timed. The students choose one of the four desserts to produce for service in the OCI restaurant, where it will be included as a menu item, meaning the student will be required to reproduce it multiple times for that night's restaurant service.
