WHAT'S COOKING at OCI ISSUE 7
|
Greetings!
We are usually inclined to take this opportunity to share videos with prospective OCI students, but in this issue of "What's Cooking," we want to share something else with you. A few months back, we started a blog. The goal was for the blog to really show the voice of the school by having the chef instructors contribute to the blog. The stories these individuals have shared show why we honestly say that we believe there is no better staff teaching culinary arts, baking and pastry, and restaurant management in the country. We invite you to take some time to get to know some of our chefs via the OCI blog. Below are links to some highlights.

Chef Hammericksen | "I ruined a Iot of pots and pots that day, and the owner took it out of my paycheck. I quit that day. I was 16 at the time. " - Chef Melanie "Hammertime" Hammericksen
Tom Bethel | Restaurant Management Instructor Tom Bethel was a Captain at Spago in the 80's, and is very well suited to offer advice on how to serve someone famous should they show up in your restaurant. Check out his four rules for what to do should you find yourself in this situation.
Chef Cronwell prepping at Stars | "And this movement wasn't just a show...for example, the restaurant had a garden up in Napa Valley. We'd get up at three four in the morning to go there. We'd write the menus in the back seat of the car after picking whatever was ripe." - Chef Instructor Randall Cronwell Ricky Bobby working the phones | What is the "Magic Closet"? I don't know! (laughs) I think Lori put that on there. It's kind of a conversation piece. Our vendors come in and see it. The nickname is something one of the chefs saw in a movie. So for names, I've got "Robert," "Bob," "Bobby," and now "Ricky Bobby." - excerpt from interview with Bobby Atterberry, OCI Facilities EngineerLink to OCI Blog |
