--Photo by Bill Lubing Plenty Available at DCFMThe number of turnips, cucumbers, radishes, and sun chokes are all growing at the Dane County Farmers' Market. Asparagus is widely available as is spinach, arugula, and spicy greens. The recent rain has helped many of our growers. And the beautiful produce available at their stalls lets us know that for most growers this season is progressing well. As we've mentioned on numerous occasions, freezing produce is an excellent way to enjoy the bounty of the market all year long. This is an especially good time to consider putting away spinach, asparagus, and some of the other early season crops. Spinach is quite easy to preserve. If you missed it last year, here's a link to our how-to video showing an easy method to prepare and then freeze spinach. We're just finishing the last of what we put in the freezer last year. Our numerous excellent meals have made room in the freezer for more from this year's harvest. Ah, the life of a home canner is never done! When you're not canning it you're eating it! Normal Market During Saturday's Syttende Mai RunThe annual Syttende Mai Run, which begins on the Capitol Square will not affect the market at all. This year the run will begin in the 200 block of Martin Luther King Blvd. There will be a full complement of vendors at the market during the entire 6:00 am to 2:00 pm hours of the market. A Few Quick Notes
 | Grilled bison burger. --Photo by Bill Lubing | Cindy and Leroy Fricke of Cherokee Bison Farms (North Pinckney St.) let us know that they're planning to vend at this week's market. They suggest ordering ahead to assure product availability.
Cindy notes that they've had the grill fired up a number of times already this season. They suggest we all do the same, whether our preference is bison, beef, pork, chicken, lamb, emu, trout, or duck.
Of course, grilling is not just for meat. Tomatoes, green onions, green garlic, asparagus, mushrooms, and many other produce items at the market are absolutely terrific when grilled.
New Potatoes and Peas Gary Heck from Heck's Market (West Main St.) says he's got some new potatoes he'll be bringing to market plus a decent chance he'll have peas in the shell.
Ready to Plant? Expect to find a plethora of seedlings, transplants, and other starts for your garden this at this week's market. There are herbs that can go in your garden or on a window ledge in your kitchen. There are bulbs that are ready to go.
Leave the Planting to Others? For those who prefer to leave the gardening to others, at this week's market you can expect to find a breathtaking variety of cut flowers, potted plants, hanging baskets, and other forms of floral decoration.
Just Say Cheese! Leave with some cheese. There are many world-class cheese makers offering their products at the Dane County Farmers' Market. Most have samples of their products. Whether you're looking for squeaky good cheese curds or a well-aged cheddar, you'll find it at the DCFM.

Recipes
Danish Pickled Cucumbers (Syltede Agurker); Radish Sandwiches

Danish Pickled Cucumbers (Syltede Anurker) --Photo by gailanng
by Elmotoo Ingredients- 2 medium cucumbers, thinly sliced
- 1/3 cup cider vinegar (Check with Nord Haus Gartens and Crafts for infused vinegars (East Mifflin St.))
- 1/3 cup water
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon minced dill weed or 1 tablespoon parsley
Directions- Place cucumbers in non-reactive bowl. Mix vinegar, water, sugar, salt and pepper; pour over cucumbers.
- Cover and refrigerate, stirring occasionally, at least 3 hours.
- Drain; sprinkle with dill weed.
- Store unused portion in the refrigerator. Use within two weeks.

Radish Sandwiches

These tasty little sandwiches are great for appetizers, tea parties, ladies luncheons, etc., but my husband ate two full sized sandwiches for lunch and loved them. The recipe is from One of a Kind, a Mobile Junior League community cookbook I received from Sweetpea Burgess in the recent cookbook swap.
Note for the World Tour participants - this recipe is included in the British category. These are ideal little sandwiches to be served with tea, as is common in Britain.
Ingredients
- 8 radishes, trimmed
- 6 ounces cream cheese (I used low fat)
- 2 tablespoons unsalted butter
- 1 tablespoon parsley, without stems
- 1 teaspoon chives, snipped
- Fresh lemon juice
- Salt
- Ground black pepper
- 6 -8 slices pumpernickel bread (or bread from your favorite DCFM bakery)
Garnish
- 4 trimmed radishes
- Coarse Salt
Directions
- For the filling, finely chop the radishes in the food processor (or hand grater). Place in a large sieve or colander. Press with paper towels to drain and squeeze out any excess liquid.
- Cream the cream cheese and butter together until fluffy (I used the food processor); add drained chopped radishes, parsley, chives, lemon juice, salt and pepper to taste, and cream again.
- Cut crusts from bread (optional) and cut into small squares or rounds. Spread with filling, and garnish with sliced or whole radishes coated with coarse salt.
- Chill thoroughly before serving.
