This Week ... Some great looking bread from Farmpride Products (West Mifflin St.) --Photo by Bill Lubing The warming continues, which means more plants at the market looking for a yard, garden, or window sill to settle into for the season. They're joined by arugula, mustard greens, spinach, and some tasty lettuce and spices mixes that would love to grace your dining table. While the state is still subject to some frosty nights, each day that passes means we're getting closer to the "all clear" when it comes to those threatening night time temperatures. Our grill has seen some service already this spring. What about yours? We roasted a duck on the grill from Krinke's Market, (South Pinckney St.) with some asparagus and potatoes on the side. Truly delicious. It looks to be a great market Saturday in store. Grab an extra bag, then this Saturday come on down to the Capitol Square. See you at market! Bill Lubing bill@dcfm.org

What to Expect This Week

Mark Kupper from Creekside Farm (South Carroll St.) dropped us an email saying that he and Chris will be at market this week. It's their first market of the season. They'll be bringing a good supply of the succulents, for which they're so well known. Mark included the photo at the right.
Cindy Fricke from Cherokee Bison Farms (North Pinckney St.) wrote to let us know that they will be at market this Saturday. She also said that they have 11 bison calves so far this year.
We asked her to take a photo and send it along. Unfortunately, the Frickes don't own a camera. Their daughter does, though. Cindy's confident she'll be able to talk her daughter into shooting a photo of the calves so we can see what all of the excite is about.
 | The cheese, cows, and grass of Northwood Farm. | We have an update as well as photos from Jim and Rebecca Goodman of Northwood Farm. (West Mifflin St.) They write that they are, "looking forward to having a new batch of cheddar and gouda made from milk from our cows.
"The cows have been grazing during the day for the past month. With rains received in the past two to three weeks, pastures are looking good. We still have cheese made in October 2010 for sale. Stop by their stand on West Mifflin St."
With summer grazing the cheese takes on a slightly different taste, with an added flavor nuance that reflects the addition of fresh grass to the diet.
 | Carol Larsen and some of her tulips. | Carol Larsen of Sunborn Gardens dropped us a line to say that this will be the last week for tulips from her. She also said that her son, Hans Larsen has joined the nursery. With that addition, the name of the company will change to Sunborn, LLC.
Sunborn is known for specialty tulips, peony flowered doubles, fragrant parrots, plus fringed and extra tall lily flowered tulips

Recipes
Watercress Salad from Cilantro

Morels, asparagus, and spinach aren't the only seasonal crops we enjoy this time of the year. Watercress will also be available for a short time.
This week's watercress salad recipe, provided by the folks at Cilantro Bar and Grill, on Madison's West side, would not typically be found on the menu at a Mexican restaurant in our area.
Armando Cristobal, who owns the restaurant with his sister Silvia de Santiago and her husband Gonzalo, notes that most of the Mexican restaurants in our area serve what is considered country-style dishes. Cilantro derives its menu from the urban side of Mexican. We suspect that years working with Rick Bayless at the Frontera Grill, in Chicago may have influenced the trio's cooking style, as well.
In honor of Cinco de Mayo, the restaurant is serving Calabaza rellena de pescado y camaron (acorn squash filled with shrimp, tilapio, and coconut-infused rice). While this main dish is as far from local as, well Mexico, the side dish of a watercress salad can be almost completely sourced from the DCFM.
Ingredients
Salad (per serving) 3 ounces of watercress 1/2 tomato cut into three wedges 4 cucumber wheels (Use a peeler to create strips from the cucumber, which you then roll into spirals.) 2 ounces of goat cheese Walnuts or pecans (We recommend hickory nuts or walnuts, available at the market.)
Dressing Note, this recipe makes plenty. The extra will store for several weeks in the refrigerator.
1 cup of oil (Olive or sunflower oil from the market) 1/3 cup apple cider vinegar 1/2 tablespoon balsamic vinegar 1/2 teaspoon, salt 1/3 teaspoon, pepper
Directions When making the dressing, mix all of the ingredients in a bowl except for the oil. Slowly drizzle the oil into the other ingredients, whisking continuously. Whisk the dressing or, if you've stored some, shake well before applying to the salad. Don't over dress the salad. A little of this dressing goes a long way.
Assemble the salad by placing the watercress on a plate with the tomato wedges and cucumber spirals surrounding it. Sprinkle on chunks of the goat cheese and the nuts.

Start Thinking Mother's Day A week from this Sunday is Mother's Day. Get your special woman flowers, a plant, or a dried arrangement from the Dane County Farmers' Market.
Many producers will be offering special Mother's Day selections. It's not too early to inquire.
Remember, when you purchase your Mother's Day flowers from the DCFM you receive double the thanks and admiration; From the one you love, and from the one who grew the flowers you gave to the one you love.
A Great Meal for a Great Cause There are just a few seats left for this year's REAP Spring Gala, taking place on Sunday, May 6 at 5:30 pm, at the Concourse Hotel, in Madison.
Half of the revenue from every ticket sold will be earmarked as a charitable donation benefiting the organization. You can support REAP while enjoying an excellent dining experience by attending this gala.
Several area chefs will prepare five courses at their individual tables. Much of the ingredients for the event come directly from the Dane County Farmers' Market.
