As is their tradition each year, Joe and Ruby Cabibbo are offering special Easter offerings for the next few weeks. Easter panettone and "sugar cookie" baskets are available that are decorated with pastel Easter eggs. If you would like special color combinations (even red for Orthodox Easter ) please call 608-873-5525 or stop by their table.
Some Great Newsletters!
While we appreciate your interest in the DCFM eNewsletter, you should know that many of the market vendors offers some great newsletters of their own. Ask your favorite vendor if there is a mailing list that you can be placed on. Updates, specials, recipes, and life on the farm are just some of the great topics covered by DCFM vendors. Some offer a Facebook page as well as an eNewsletter.
Farmer Paul is Harvesting Those Greens!
The word in an email from Kay Jensen over at JenEhr Farm lets us know that Spring is here. Kay writes:
"Farmer Paul loves his over wintered spinach. Now he's excited about harvesting greens galore. The most beautiful, delicate offerings of arugula, mizuna, Tokyo bekana, red mustard, yellow mustard, and an all salad mix are available. Mix and match any of these to make a tasty salad or delicate sautee. They're certified organic, grown in the ground so they pull out all the flavors and nutrients of our farm prairie soils."
Weather co-mingles spring crops with over wintered offerings. Some of the offerings from Blue Skies Berry Farm for this week include sorrel, garlic chives, and lovage. Spinach, rainbow chard, cilantro, baby kale, and a spicy salad mix round out their offerings.
Some young, tender collard greens can be found at Don's Produce while Blue Valley Gardens offers mushrooms, water cress, and potatoes. Black Earth Valley Farm also has watercress along with spinach, cilariac, and onions.
There is plenty more to discover at this week's market. The recent weather has catapulted many crops forward by several weeks.

'Taste of the Market' Breakfast
Menu for March 31, 2012
Guest Chefs: A first for the "Taste of the Market" breakfast, Chef Joey Dunscombe from the Weary Traveler with help from the UW's Dietetics and Nutrition Club will be preparing this week's breakfast. Breakfast Price: Adults: $8.00 and $4.00 kids and those who truthfully can't eat a large portion. Breakfast Hours: 8:30 am to approximately 11:00 am This Week's Menu includes: - Eggs over semolina toast smothered in Mediterranean-style tomato stew;
- Green salad with spinach, pears, cucumbers, sheep's milk feta, and a homemade vinaigrette;
- Sausage patties and;
- A lavender cookie.
- Beverages: organic fair trade coffee using Just Coffee's Friends of the Dane County Farmers' Market blend or tea; Fresh Apple Cider or cranberry juice. Milk is available upon request.
While we try to serve the menu that is listed in our promotion, and this is most often the case, parts of this menu may be substituted or changed. Chicken Salad with Sauteed Mushrooms

It's getting to be that time of the year when fresh watercress, lettuce, mixed greens, and green onion are starting to appear at the market. Here's a great recipe that combines this produce with another food that the market is known for, locally raised chicken.
Ingredients1 cup fresh large mushroom, sliced 2 teaspoons olive oil (or sunflower oil from the market)1/4 cup celery, chopped 1/4 cup green onion, chopped 1 tomato, cut in 8 wedges 1 cup watercress, loosely packed, large stems removed 2 cups lettuce or other greens from the market, your choice 1 chicken breast half, cooked and sliced1/8 teaspoon salt 1/4 teaspoon pepper, freshly ground Salad dressing of your choice (optional) Directions - Heat oil in a non stick frying pan; add sliced fresh mushrooms; saute until nicely browned on both sides, about 10 minutes; Set aside to cool.
- Add the next 5 ingredients to a large bowl, from celery to lettuce, mix well.
- Scatter warm mushrooms over all, place chicken slices on top, sprinkle salt and freshly ground course pepper over all.
- We prefer ours with just the salt and pepper. If you prefer, add your choice of salad dressing.

Soap and other "craft" items that are allowedat the indoor markets are prohibited at the outdoor markets. It won't be too long before the market moves outdoors to the Capitol Square. Volunteers are needed to staff the Information Booth, located at the top of State Street. The BriarPickers: The BriarPickers are a mandolin/violin duet, featuring Brian Ray and Paul Kienitz. They meld traditional Appalachian style folk melodies with a classical string ensemble approach. This music, dubbed "rustic chamber music," has a very accessible and welcoming sound.
