This Week ... Great Tasting Squash will be readily available at this week's market. --Photo by Bill Lubing An Onion Skin and Two Empty Egg Cartons ... ... are about all that's left. These past two weeks without the Dane County Farmers' Market leaves our pantry, refrigerator, and cellar storage devastated. We've no garlic, potatoes, spinach, or carrots. One broken chunk of cheddar cheese and a few dots of feta swimming in a lonely container of brine might be enough for a modest cheese sandwich ... but we've no bread. There are a couple of strips of bacon, though they'd look mighty sad on a plate sans eggs, potatoes, or apple slices. It All Changes This Saturday ... ... with the first session of the Late Winter Dane County Farmers' Market at the Madison Senior Center, 330 West Mifflin St., in Madison. Apples, pears, cider, spinach, potatoes, carrots ... a huge variety of produce, meats, cheeses, and bakery will be available at the market. Cookies, cheesecake, lettuce, cabbage, squash and more can be purchased direct from the producer. The market runs from 8:00 am until 12:00 Noon. The "Taste of the Market" breakfast runs from 8:30 am to around 11:00 am with a price of $8.00 for a full breakfast or $4.00 for a children's/smaller version (see more below). Parking There is plenty of parking available, located at the adjacent City of Madison ramp and nearby metered street spaces. Volunteer Volunteers perform most of the prep, serving, and clean up for the "Taste of the Market" breakfast. 'Taste of the Market' Breakfast
Menu for January 7, 2012
Guest Chefs: Community Volunteers Breakfast Price: Adults: $8.00 and $4.00 kids and those who truthfully can't eat a large portion. This Week's Menu includes: - Spinach, Egg and Cheese bake;
- Savory root vegetable hash including potatoes, sweet potatoes and carrots,
- Breakfast sausage;
- Toast with fresh jam (gluten free option provided).
- Beverages: Organic fair trade coffee using the Friends of the Dane County Farmers' Market blend or tea; fresh apple cider or cranberry juice. Milk is available upon request.

Spinach Salad with Honey Bacon Dressing

The best spinach salad I've ever had. Every time I serve this to guests, I get requests for the recipe. I found this in Taste of Home Soups, Salads and Sandwiches
Ingredients 8 cups torn fresh spinach 1 cup sliced fresh mushrooms 1/4 cup sliced onion 1 medium tomato, seeded and chopped 1 hard-boiled egg, chopped 1/2 cup shredded parmesan cheese, shredded on large holes of grater 7 slices bacon, cooked and crumbled 1/2 cup honey 1/2 cup vinegar 1/3 cup vegetable oil 1 teaspoon yellow mustard or 1 teaspoon spicy brown mustard 1 teaspoon lemon juice
Directions- Combine first 6 ingredients with 5 of the cooked, crumbled bacon strips in a large bowl.
- In a small bowl, whisk together the honey, vinegar, oil, mustard, lemon juice, and remaining 2 strips of cooked, crumbled bacon.
- Pour over salad.
- Serve immediately.
Great Italian Meat Balls

Ingredients 2 pounds ground beef, pork, emu, bison, or lamb (or a mixture) 1 1/2 cups Italian style breadcrumbs 1/2 cup grated cheese (Parmesan or other that is available at the market) 2 tablespoons parsley 4 eggs Chopped fresh garlic 1/2 small onion, chopped Salt and pepper 1/4 cup milk Directions - In large pot mix all except milk with hands.
- Continue mixing until throughly blended.
- Add enough milk to form into balls, add more milk if needed.
- Shape into balls.
- Bake in shallow pan at 350 until browned.
- Add to favorite tomato sauce, cook slowly 45 minutes.

Music for This Week: The Old Gray Cats
The Old Gray Cats is an ensemble of fiddle (Linda Millunzi-Jones), guitar (Greg Jones), banjo (Joe McNally) and stand-up bass (Willi Van Haren). The group plays old-time dance band music that you might have heard at barn dances or square dances, with a little singing thrown in for fun!
Most of the group have been playing together for decades. Come tap your feet or waltz with your breakfast and they'll play some cheerful tunes for you.
