Last Market of the Year 

This Saturday marks the last Dane County Farmers' Market (DCFM) of the year. There will be no market for the following two weeks, December 24 and December 31. The market resumes on January 7, 2012 at the Madison Senior Center, 330 W. Mifflin St.

 

This will be your last chance to purchase locally produced decorative items at the market this holiday season. Wreaths, table centerpieces, decorative gourds, candles, pine boughs, and more make perfect gifts and seasonal decorating pieces. Purchase some farmstead soap, local honey or maple syrup for your own use or to give as gifts.

 

Gift Boxes Available at Info Booth

Looking for that perfect box in which to present your gift purchases? The DCFM offers gift boxes ready for your contents. Available at the Information Booth, these boxes come with red and/or green  crinkle paper. At $3.00 a box, they make gift giving using market products easy. Some producers, such as Stella's Bakery and Savory Accents, offer free gift boxes with qualified purchases.

 

A Ham, Roast, Turkey or Duck

Look over the Producer Roster (below) to find the centerpiece of your holiday meal. If you're debating whether to buy your ingredients from the DCFM or purchase it from your bricks and mortar standby, consider this. Items for sale by DCFM  producers were grown, raised, or produced by those producers. The DCFM is the largest venue in the country where the person selling is the one who produced it. When you ask DCFM vendors about the products they're selling, you know by their knowledgeable answer and the pride in their voice that your meal is going to reflect the sum of their efforts--tasty, fresh, and locally produced.

Easy Enchiladas (Beef or Chicken)

Oh heck, let's just call them holiday enchiladas! Prepare this recipe one night during the holiday season when your family will not be expecting something that, at first glance, is contrary to our typical holiday fare. Yet these enchiladas provide that warm comfort we all look for when life goes into that holiday season groove..

If at all possible, do stop by the GittOrganics booth to pick up some of the finest flour tortillas you're likely to find this side of the border. Made by the Gitto Family (here's the video showing how they do it), these tortillas are thin, yet supple, flavorful without walking over the other ingredients.

Yup, most of the ingredients are obtainable at the market. Beyond the ever-popular beef and chicken, try bison, emu, turkey, goose, or pork fillings. To go meatless, try using squash as a filling or add extra cheese, in a multitude of varieties from a number of world class cheese makers selling at the market.

We did not use the canned enchilada sauce mentioned in the recipe. Included is a simple enchilada sauce recipe we found that tastes great. Like the main dish, this enchilada sauce uses many ingredients from the DCFM, including the tomato sauce, chili pepper, broth, and oil (sunflower)

Ingredients
1 pound ground beef or 1 pound boneless skinless chicken breast
1/4 cup chopped onion
1 teaspoon garlic powder (I prefer fresh minced)
1 tablespoon Worcestershire sauce
1 (8 ounce) can tomato sauce
1 teaspoon paprika
1 teaspoon oregano
2 teaspoons chili powder (more or less for your taste) (Try Savory Accents)
1/2 teaspoon cumin
1/2 teaspoon black pepper
3 cups shredded cheese (I like the jack or cheddar combos)
Enchilada sauce (see recipe below or 1 (10 ounce) can enchilada sauce (I prefer the green sauce)
Olives (optional)
12 corn tortillas (We used flour tortillas from GittOrganics)
Sunflower oil (Olive oil can be used.)


Directions
  1. If using chicken, boil chicken in water.
  2. Then rinse and shred with fork. (We baked it)
  3. Add onion and garlic.
  4. If using ground beef, brown with onion and garlic, drain.
  5. Add next 7 ingredients (Worcestershire sauce through black pepper).
  6. In another skillet, heat oil.
  7. Add tortillas, one at a time, for 10 seconds on each side.
  8. Drain on paper towel.
  9. In 10x13 baking pan, pour just enough enchilada sauce in the bottom to coat the bottom of the pan.
  10. Fill each tortilla with a spoonful of meat mixture.
  11. Cheese, onions, and/or olives can be put inside each enchilada at this time, if desired.
  12. Roll tortilla and place seam side down in pan.
  13. Continue with remaining tortillas.
  14. Pour remaining enchilada sauce over tortillas and top with cheese (additional olives may be added if desired).
  15. At this time, pan may be refrigerated for several hours or overnight.
  16. Bake in 350 degree oven for 20 minutes (30 minutes if refrigerated).

Enchilada Sauce

 Ingredients

  • 2 cloves garlic, minced
  • 3 tablespoons oil (we used sunflower from the market) or 3 tablespoons shortening
  • 2 tablespoons flour
  • 1/4 cup chili powder
  • 2 cups beef broth
  • 15 ounces tomato sauce
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin  

 

 

Directions

  1. In large saucepan saute garlic in oil until lightly browned.
  2. Stir flour into oil until smooth; cook, stirring constantly, 1 minute.
  3. Stir in chili powder.
  4. Gradually stir in broth, tomato sauce, oregano, salt and cumin.
  5. Simmer for 15 minutes.

When the DCFM resumes at the Madison Senior Center on January 8, 2012, it will be approximately half the size it will be this Saturday. This is the final "slimming down" of the market until spring. Take a look at the Producer Roster, found above. Last minute circumstances prevent the list from being 100 percent accurate. However, it's substantially correct.

See if there is anything in short supply or missing in your pantry. Then plan your Saturday shopping accordingly. If some of your favorite vendors will be finishing up the market for the season, inquiry about buying product during the winter, until they return to the market in the spring.

The last market at Monona Terrace is always festive. Plan to attend!

Music, Oil, Adios Until January!

Local Foods Innovator ...

Odessa Piper is quite pleased with her purchase of pumpkin seed oil
from Driftless Organics. Josh Engel of Driftless says the oil is in short
supply, as they didn't make much of it. He notes that it's a "finishing oil,"
used to dress salads and for uses other than cooking.

Music for This Week: Moldy Jam; Oak Apple Morris Dancers 

8:30 - 10:30:   Moldy Jam is the longest running jam of old time music in the Madison area. It started in the mid 1980s and has revolved around the principles of sharing old-time and Irish tunes in a accepting and welcoming setting. Moldy Jam is still going strong with members ranging in age from 16 to 60, It continues to provide a venue for people who want to learn to play music that is part of American history.

 

11:00 - 12:00: Oak Apple Morris Dancers: Morris dancing is an old dance form practiced in Britain from the Middle Ages to the present day. It is an enthusiastic dance style, performed at seasonal festivals. It is usually danced in sets of six dancers wearing white shirts and trousers with colored vests or sashes, although there are also dances for four or eight dancers.

 

Dancers have bells strapped to their shins and wave either hankies or sticks about. Oak Apple Morris is Wisconsin's only Cotswold Morris group. These dances are in a style from the Cotswold area of England between Oxford and the Welsh border.

 

 

Enjoy Saturday's Market before the Two Week Break

Saturday's market will be an enthusiastic farewell to 2011, with the welcome to 2012 coming at the January 7, 2012 market at the Madison Senior Center. Along with the change in venue, the "Taste of the Market" breakfasts will resume at the January 7 market.
