A Lot Going on at Monona Terrace

Monona Terrace puts a number of fun, seasonal activities all under one roof. So do come to the Terrace for the  Dane County Farmers' Market (DCFM) and plan for a little extra time to explore and enjoy.

 

This week Handmade Wisconsin - A Winter Arts & Crafts Bazaar takes place at the Terrace from 7:30 am until 2:00 pm. Come and find those holiday gift ideas that you just can't find at area brick and mortar stores.

 

The Otis Redding Memorial honors the singer's life from 8:00 am until 5:00 pm. On December 10, 1967 Otis Redding died in a place crash in Lake Monona, not far from where Monona Terrace stands today. A memorial to the celebrated soul singer is located in the William T. Evjue Rooftop Garden of the Terrace.

 

Michael Feldman's "Whad'Ya Know?" Show takes place from 10:00 am until 12:00 Noon. Do your shopping at the market. Put your groceries in the car. Then come and enjoy the show. You can find ticket information here.

Spanakopita (Greek Spinach Pie)

This makes a great appetizer at a holiday party or wonderful side dish at a meal!.Fresh spinach from the market gives it a flavor and texture you just don't get from frozen or store-bought varieties. 

 

The secret to my spanakopita is three kinds of onion - red onion, spring onions and leek. If you are lacking one, just add more of the others, but this is the 'secret ingredient' to an excellent pie. Enjoy!

 

Pastry
1 pound country-style phyllo pastry (If you can't get that regular phyllo pastry will do.)
1/2 cup extra virgin olive oil (or use sunflower oil from the market) 



Spinach Filling

1/4 cup oil
2 pounds spinach, cleaned, tough stems removed
6 spring onions, cleaned, sliced in 1/4 inch lengths (We used 1 cup of spicy salad mix, chopped. It gave the dish a different, yet excellent taste.)
1 leek, white and tender part of green, cleaned, sliced in 1/4 inch lengths (We slice in half lengthwise, and thoroughly wash between the layers before slicing.)
1 medium red onion, chopped fine
3/4 cup fresh dill, minced
1/2-3/4 lb feta cheese, crumbled (Available at the market.)
3 eggs, beaten
Salt and pepper

Directions
  1. Heat 4 tablespoons of oil in a large saucepan and sauté the onions and leek until translucent, about 2-3 minutes. Add the spinach and saute until the leaves have wilted and the liquid has cooked off, about 8-10 minutes.
  2. Remove the pan from the heat and allow to cool somewhat. When cool enough to handle, finely chop the spinach and place in a large bowl.
  3. Preheat the oven to 375°F.
  4. Lightly oil a 12 inch diameter metal baking pan (you can use a larger baking pan - you will just have a thinner pita, but don't use a smaller one), or a 10 x 15 inch rectangular baking pan.
  5. Add dill and feta cheese to the spinach. Add salt and pepper to taste (careful with the salt - the feta will add quite a bit of its own). Pour the eggs over and give a stir to combine well.
  6. Open up the phyllo pastry and place on a work surface. If using the country style pastry proceed. If using the thinner phyllo; cover with a damp cloth. (Continue to cover the pastry sheets with the damp cloth each time you remove one as you prepare the pie.).
  7. Layer the phyllo in the pan, allowing the edges to hang over the sides of the pan, brushing each phyllo layer generously with oil.
  8. Use up half the phyllo sheets to make the bottom pastry layer, allowing excess pastry to drape over edge of pan.
  9. Put the spinach mixture in and press the top down gently to smooth filling. Tuck in the pastry draping over the edges.
  10. Repeat layering with the remaining phyllo, oiling each sheet generously.
  11. Using a sharp knife, score the upper layers of pastry into the size pieces you will want to serve once the pie is baked- BE CAREFUL NOT TO CUT THROUGH BOTTOM PASTRY.
  12. Bake the pie in the middle of the oven for approximately 40-45 minutes until it is golden brown. For the last 15-20 minutes, I put my baking pan directly on the oven floor to crisp it better.
  13. Cool till just warm (we never, but never eat this hot! The flavors just wouldn't come through properly). Cut into serving pieces and serve either just warm or at room temperature.
  14. Note: If my spinach filling appears to be too 'wet', I often take 2 of the phyllo sheets and use them as a 'layer' between the spinach filling; these sheets absorb the extra liquid (they must not be brushed with oil).
  15. It's also worth noting that Greeks love their olive oil! I have used olive oil with a lighter hand than most Greeks in this recipe - but it may still be too much for you. Feel free to add the amount you feel most comfortable with, but be aware that flavor may be compromised.

We strive to keep this list as accurate as possible. We probably  missed an item or two that is at the market or listed an item as available when it is not. Chances are that not all items mentioned or listed below will be at each market.

at the entrance to the market.
Friendly volunteers will be able to help you.
 

   

Wreaths, decorated gourds, bees wax candles, and table decorations are all available at the DCFM for your holiday decorating and gift giving. Carol Larsen at Sunborn Gardens says she's making up more table centerpieces, but we're betting they're still going to go fast.

Many of us will create our holiday meals with another command performance with a turkey from the DCFM. A number of vendors still have turkeys available. Contact your favorite farmer to to inquire or place a pre-order.

We're going to prepare a goose for our holiday meal, purchased from Krinke's Market. They also have turkeys, rabbits, and chickens, along with their popcorn. You also check for turkeys at Blue Valley Gardens, JenEhr Family Farm, Jordandal Farms, Pecatonica Valley Farm, and Shady Blue Acres.

Fowl is not the only way to go, of course. Jordandal Farms will have top round or eye of round roast, tri-tip or sirloin tip roast. Carrie Johnson emailed us to say she has a "great and simple recipe to serve your guests." She will also have bone in whole ribeyes, whole boneless ribeyes, and whole tenderloin."

A number of other producers are selling excellent meat products, including GittOrganics, Sylvan Meadows Farm, McKluskey Brothers, Fountain Prairie Inn & Farms, and Capri Cheese.

Of course, there is a lot of excellent produce at the market, with spinach, onions, squash, kale, beets, broccoli, and much more.

Don't forget to check out the excellent bakery and cheeses from a broad variety of producers. If you're looking for something specific, don't hesitate to ask at the DCFM Information Booth at the market entrance. Our volunteers are superb at knowing what's at any given market.

Two More Markets This Year

This Saturday and Saturday, December 17 are the last two markets of the year. The DCFM will then take two weeks off, resuming on January 7, 2012 at The Madison Senior Center 330 W. Mifflin St.

 

Music for This Week: The BriarPickers

Playing from 9:00 am until 11:30 am, The BriarPickers are a mandolin/violin duet, featuring Brian Ray and Paul Kienitz. They meld traditional Appalachian style folk melodies with a classical string ensemble approach.

 

This music, dubbed "rustic chamber music," has a very accessible and welcoming sound. It's the perfect complement for a relaxed pub or dining atmosphere, as well as shopping and snacking at the Farmers' Market!
