'Tis the Season. 'Tis the Place

Perhaps you've noticed the huge push in the local media about buying local this season. As a member of  DaneBuyLocal, the Dane County Farmers' Market heartily endorses this buying practice.Yet it's not the market's membership in this fine organization that gives rise to its practice of supporting locally owned businesses.

 

The core values of the market are based on providing a venue so that those that raise, grow, and product their own products can easily sell them directly to the end users. During the summer it is primarily grocery items and plants that are offered for sale, while at the Early Winter Market at Monona Terrace many non-food items are also available. In other words, gifts!

 

Gifts from the market include table decorations, gourd art and jewelry, evergreens, dried flowers, holiday decorations, and stocking stuffers that include maple syrup, sausage, hot sauces, pesto, vinaigrettes, popcorn, cheese, jellies, breads, confections, cookies, and much more.

 

For $3.00, gift boxes can be purchased at the Info Booth. You can also purchase gift certificates at the winter market -- something that is not possible at the summer market.

 

When you add to the gifts available at the market, all of the fixin's for holiday parties, dinners, and family meals that are available directly from the producer, then the idea of the DCFM as a (dare we say it) one-stop shopping solution for the locally conscious shopper shows authority.

 

Some of the finest aspects of the DCFM are that, unlike the big box stores, there's no pushing or long lines. And as most regular shoppers appreciate, at the DCFM the seller probably knows your name ... and that of your spouse, children, and, if you have one, your dog. 

 

Priceless.

African-Style Broccoli

This recipe uses many ingredients that can be found at this week's market. It's got bold flavor without being overpowering. 

Ingredients
4 1/2 cups broccoli florets, small
2 1/2 cups cauliflower florets, small
1 1/2 cups carrots, diagonally sliced 1/4 inch slices
1 tablespoon canola oil (Or use sunflower oil from the market)
1 teaspoon salt (to taste)
1 teaspoon ground ginger
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon freshly ground nutmeg
1/2 teaspoon crushed red pepper flakes (to taste)
1 cup sour cream (reduced fat ok)
2 tablespoons cider vinegar
1 tablespoon mild honey (to taste)
1/2 cup thinly sliced green onion (or regular onion)
1/2 cup toasted pine nuts or 1/2 cup coarsely chopped toasted peanuts (For great taste, try toasting hickory nuts, available at the market)



Directions
  1. Steam first 3 ingredients, covered, 2 minutes. Rinse broccoli mixture under cold water;
  2. drain well.
  3. Combine oil, salt and next 5 ingredients (salt through crushed red pepper) in a small skillet; cook over medium heat 2 minutes or until lightly browned, stirring constantly.
  4. Combine spice mixture, sour cream, vinegar, and honey in a bowl; whisk well. Add to broccoli mixture; toss well to coat. Stir in onions just before serving, and sprinkle with nuts.

Stroganoff-Style Beef with Broccoli

Ingredients
1/2 cup light sour cream
1/4 teaspoon dried dill
1 pound boneless beef top round steak, trimmed and cut into thin bite-size strips
1 tablespoon cooking oil (Try sunflower oil from the market)
1 small onion, cut into 1/2-inch-thick slices
1-3 cloves of garlic
3 cups dried wide egg noodles (6 ounces) or rice
3 cups broccoli florets
3 tablespoons all-purpose flour
1 (14 ounce) can beef broth (See Jordandal Farms)
3 tablespoons tomato paste (See Tomato Mountain)
1 teaspoon Worcestershire sauce
ground black pepper



Directions
  1. In a small bowl, stir together sour cream and dillweed; set aside.
  2. In a large skillet, cook beef, half at a time, in hot oil over medium-high heat until desired doneness. Remove beef from skillet and set aside. Add onion and garlic to the same skillet; cook for 8 to 10 minutes or until onion is tender.
  3. Meanwhile, cook noodles according to package directions, adding broccoli for the last 3 minutes of cooking; drain well. Return noodles and broccoli to pan; cover and keep warm.
  4. Sprinkle flour over onion mixture in skillet. Stir to coat. Add broth, tomato paste, and Worcestershire sauce. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more.
  5. Return all beef to skillet; heat through. Season to taste with pepper.
  6. Remove from heat. Stir in sour cream mixture.
  7. Serve beef mixture on top of noodles and broccoli.
  8. Makes 4 servings.

Tip: Partially freeze beef for easier slicing.

Oprah's Top Ten

Gluten-Free 'Bundle' Sure to be a Hit

For folks who suffer from gluten intolerance, a meal featuring fresh pasta is most often just a dream. Gluten-free pasta is almost impossible to find. So it was fortuitous that at the Fancy Food Show in New York City, Peter Robertson, founder of RP's Pasta Company met Adam Glassman, the creative director of Oprah Winfrey's O Magazine.

 

"He was very impressed with the quality of our gluten-free pasta," Peter explains. So impressed, in fact that it was decided to include the pasta as one of the items in the magazine's "ten best" list for December.

 

"The magazine likes to present projects as a package," Peter continues. "So I thought, 'How can we turn this into a package?' Then it dawned on me ... What about frozen pesto from Renaissance Farm? And then, 'Who can provide fulfillment (shipping)?' Well, Silly Yak Bakery can do fulfillment because they currently sell their bakery products over the internet. We came up with bundles of pasta, pesto, and bakery."

 

Ideally, Silly Yak also sells gluten-free bread and rolls while Renaissance Farm's Basil Pesto is naturally gluten-free.

 

You can order this gluten-free package now through Silly Yak's web site.

 

The January issue of "O" Magazine, scheduled to hit new stands on December 6 will list the bundle.

 

"The thing is we were actually supposed to go into the December issue," says Peter, "but it was cut because they had too many items. That's where it was left."

 

Peter says that Miguel, husband of Silly Yak owner Holly Beach wanted to press on. "He was like, 'We're going to do this anyway,'" Peter relates. "'We had a good idea. Let's put it up on the web site as a gluten-free pasta bundle.'"

 

After sending the style editor at the magazine a link to the site, Peter says he got a return call saying mention of the bundle would appear in the January issue.


Without the resources of the Dane County Farmers' Market, Peter says "I probably wouldn't have come up with the idea. Just knowing the other vendors and because there is so much good product at the DCFM," Peter says, goes a long way to spawn great ideas like the gluten-free bundle.

 

Mark Olson, founder of Renaissance Farm comments regarding the magazine: "It is a huge honor to be recognized at this level. And a huge thanks needs to go out to all of our customers, who knew about our products way before Oprah.

 

"What's really exciting about this for me is that farmers first started experimenting with their 'value added' thing. They figured that out and now we're experimenting with this product bundling.

 

"In between for all of us the DCFM customers have supported us. All of us in the community can take pride in this recognition from Oprah. It's a statement as to who we are as a food community," Mark notes.

 

Most importantly, when it comes to this DCFM product bundle, there are thousands suffering from gluten-intolerance who can now enjoy pesto on pasta with bread at their meals.

For the next three markets Joe and Ruby Cabibbo from the bakery of the same name will be bringing their Christmas Panettone. They are fresh, with no preservatives. Buy them at the market or order them on line at www.cabibbosbakery.com

Max over at Stella's Bakery says that this week they'll be sampling their Jamaican Christmas Bread and will, of course, have plenty of their hot and spicy cheese bread.

Expect to see Rosanne from Marquardt's Tree Farm this week. She brings their excellent maple syrup and associated products. Rosanne says this will be their last market until spring.

Bob and Audrey Biersach from Hickory Nut Heaven plan to vend at this week's market. They've got plenty of hickory nuts and probably a few black walnuts as well.

Carrie Johnson from Jordandal Farms would like to remind everyone that she'll be bringing a full complement of their home made soups, including jambalaya, chicken curry, smoked turkey basil, beef stew, and turkey chili with beans. She'll also be bringing beef, Rosemary chicken, spiced pork, and breakfast pasties along with 16 and 32 ounce containers of their beef and chick stock. She'll have her regular chicken, pork, and beef products as well.

Cindy and Leroy Fricke of Cherokee Bison Farms will make the trip into the market this week, bringing their bison and associated products, maple syrup, and sunflower oil.

If you haven't tried the powdered garlic from Shagbark Ridge Farm, you're in for a treat. Made from their own garlic, it will taste great with all of your savory cooking.

A number of vendors have tomatoes available. The spinach is looking excellent and the apple supply continues to be robust.

REAP Selling Copies of Journal at Market
The REAP Food Group will be selling copies of the 2012 Wisconsin Local Foods Journal, at the market this Saturday and next. Written by Terese Allen and Joan Peterson, this is a great guide chock full of recipes, tips and stories about sustainable eating, plus a daily planner. 
  
Music This Week
The Bear Milkers will be playing at this week's market from 8:00 am until 10:00 am with Amos Moses playing from 10:00 am until 12:00 Noon.

The Bear Milkers are a Madison-based group, known for their Old Time and Irish tunes. Members of the band are Mike Kehl, fiddle; Gary Giorgi, recorder; Dave Brown, guitar and mandolin; and Marilyn Carien, bass .

 

The music the members  play is primarily for dance, contra dance to be more specific, but also is ideal for background music for social events. There is a great energy in this music which helps to get your feet moving. Most of these tunes originated in the 19th and 20th centuries and many came across the ocean with the migration of European immigrants.  

 

Amos Moses: Performing on keyboard/guitar/vocals, Amos serves up a  mix of honky-tonk, boogie, roots country, western swing, ragtime, R&B, blues, and folk. He might even perform a song or two for the wee folk.

 

Coming in from the hills of Sauk County, and sporting his best hat from Farm and Fleet,  he's sure he'll win the hearts of "all them sophisticated young Madison women shoppin' for rutabagas and kale." Find out more at amosmoses.net.
