Wow, what an opening!
The first market of the season at Monona Terrace was festive, full of great products, and seemed over far too quickly. Perhaps it's the change in hours. The market opens at 7:30 am and runs until Noon. Many folks, including DCFM producers, appreciate the "late morning" hours of the market.

Got Turkey?
As is a traditional sight at the market before Thanksgiving, many folks will be picking up their pre-ordered turkeys at Saturday's market. The good news is that a number of producers still have turkeys available for sale on Saturday, including Amy Carr of Pecatonica Valley Farm who emailed us to say they will have turkey available on Saturday. When we checked with Gene Krinke a while back he noted that they should still have turkeys to offer, along with goose, duck, chicken and rabbit.

Got Fixin's?
Why serve boring grocery store bread when some of the finest bakeries in the state bring their bread, rolls, and other products to the DCFM? We received an email from Cabibbo's Bakery letting us know they'll be offering semolina stuffing cubes for Thanksgiving.

For a couple of years we've brought a DCFM sourced cheese plate to the family Thanksgiving gathering. It's always been a huge hit, especially for those relatives that don't get to the market. More than once they've been convinced that much of the cheese was of European creation, rather than from our talented Wisconsin cheesemakers..

Then, of course there are the greens, tomatoes, potatoes, and other produce selections that make preparing and presenting a DCFM-inspired Thanksgiving dish the first one that gets passed around for seconds!

EBT at the Market
If you utilize EBT services you can purchase food items at the Dane County Farmers' Market.

Simply stop at the information booth to pick up "market dollars" which can be used at any producer selling food items at the market. Non-food items cannot be purchased using market dollars.

This is a hugely successful program, with many folks able to purchase a good percentage of their grocery items at the market.

See you at market!

Smoked Trout Spread

by Jenny Anderson, Artesian Trout Farm

Really yummy. A nice dip to serve the relatives at Thanksgiving or serve it any time during the holiday season.

Ingredients
  • 1/2 small red onion, divided
  • 1/2 canned (rinsed) white beans
  • 4 ounces smoked trout, skinned, boned and flaked (about 3/4 cup)
  • 3 ounces reduced fat cream cheese
  • 3 tablespoons lemon juice
  • 1 tablespoon prepared horseradish (Check with Land of Oo's.)
  • 1 tablespoon finely chopped fresh parsley
  • Ground pepper to taste
  • 20 thin whole grain crackers
  • 2 medium tomatoes, halved and sliced
  • 1 cucumber, thinly sliced (we used a green pepper, as cucumbers are out of season.)

Directions
  1. Finely chop half of the onion, thinly slice the rest.
  2. Mash beans in a medium bowl with a fork until they are mostly broken down.
  3. Add the chopped onion, trout, cream cheese, lemon juice, horseradish, parsley, and pepper.
  4. Stir well to combine with the beans.
  5. Serve the trout spread with a platter of crackers, sliced tomatoes, cucumber (or green pepper), and the sliced onion.

NOTE: We have many other recipes sprinkled throughout this issue of the DCFM Newsetter!

A Visit to the First Indoor DCFM at Monona Terrace

A three-minute stroll through last week's market at Monona Terrace. Here's a brief introduction of the products and folks you'll meet (and eat)!

the Thanksgiving table. --Photo by Bill Lubing

We strive to keep this list as accurate as possible. We probably  missed an item or two that is at the market or listed an item as available when it is not. Chances are that not all items mentioned or listed below will be at each market.

In addition to the products and producers we mentioned in the opening, this week Sunborn Gardens will be featuring table arrangements like the one shown above.

We remind you that there are turkeys available this week. Ask at the Information Booth at the entrance to the market to find a producer. If you'd like a bird to supplement your turkey, consider duck or goose. Or perhaps your Thanksgiving gathering is small, so you'd like to forgo the turkey. Krinke Market has duck and goose. Blue Valley Gardens may have duck. Check here for a few roast duck and goose recipes.

A number of producers are offering Wisconsin raised sweet potatoes. Many folks think these awesome tubers can only be prepared using brown sugar and marshmallow. While this is a great, traditional way to serve them, there are many savory sweet potato recipes that forgo the (non-local) sugar. And as you discover at the market, many "regular" potatoes are available in colors other than white or yellow. Check them out at the market!

We are happy to see that Jim and Nodji Van Wychen from Wetherby Cranberry Company are on the producer list this week. While Nodji will tell you that cranberries will last months, if not years, in the freezer, it's great to get them fresh for the holidays. They will also be bringing their dried cranberries.

Beyond the traditional jelled or relish dishes, there are many great recipes that use cranberries, even one that uses this little fruit in combination with sweet potatoes. Imagine that! Seriously.

We feature a smoked trout dip recipe from Artesian Trout Farm this week. Check around with some of the other vendors, including Savory Accents, Renaissance Farm, and Tomato Mountain for other great dip, sip, and drip recipes and products.

Foodie, novice chef, professional, or 'thumbs in the kitchen,' remember ... preparing the meal brings one of the greatest Thanksgiving joys!

To find a vendor or product
you can: 1) check the DCFM website or take a leisurely stroll through the market. If you'd like to check with your favorite vendor about product availability,  go here, then do a search for contact information. And remember, you can always inquire at the Information Booth, found at the entrance to the market.
