We'll See you At Monona Terrace
The first indoor market of the season happens this Saturday at Monona Terrace. You'll find plenty of producers bringing a variety of products. An adjacent parking ramp makes it easy to find a spot. A few things to remember:
  • The market hours are from 7:30 am until 12:00 noon.
  • Non-food items such as soap, decorated gourds, wreaths, and other craft goods are available at the Early Winter Market at the Monona Terrace.
  • Coffee and beverages are available close by within the Terrace.
  • EBT services are found at the DCFM information booth, at the entrance to the market.
  • An ATM machine is located on the west side of the Terrace.
  • A Monona Terrace information table is available on the main level.

Please note that the this week the market is located on the main level. It is contained in two rooms. Please don't miss out on great market values. Visit both rooms!

This is not some recipe I found. It is just my personal way of marinating/seasoning any kind of meat. I use a flavor injector, an electric roasting oven, some oven bags, foil, ties, pop-up timer and a basting brush. I use this same seasoning for a pork roast.



For Marinade
  • 20 pounds whole turkey
  • 1/2 cup goya adobo seasoning (or more)
  • 10 garlic cloves
  • 2 sprigs fresh cilantro, chopped
  • 1/2 cup extra virgin olive oil (Or sunflower oil from the market)
  • 1/2 cup fresh lime juice, plus
  • 1 additional lime, halved
  • 2 tablespoons oregano

For the Baking Day
  • 5 large garlic cloves, mashed, divided
  • 1 cup butter, divided (2 sticks)
  • 1 medium white onion, finely chopped
  • 1 large red onion, finely chopped
  • 1 green pepper, finely chopped

Directions
  1. One week before serving, while it thaws, or 3 days before if fresh, clean turkey and wash it with cold water.
  2. Rub the bird inside and out with the limes, lightly squeezing as you work. Liberally sprinkle with the adobo seasoning.
  3. In a food processor or blender lightly pulse the oil, the 10 garlic gloves, lime juice, oregano, cilantro for about 10 seconds or until garlic is puréed. With your hands rub this mixture over and inside the bird. Put it in an oven bag with the marinade, tie the open end of the bag very tightly and put back in the fridge until ready to prepare.
  4. On baking day: Preheat roasting oven to 325 degrees or refer to a turkey guide for time/temperature by pound.
  5. Melt half of the butter with half of the mashed garlic and put in a flavor injector. Open the oven bag (don't discard) where the turkey is and inject garlic butter in meaty areas, breast, leg, etc. Put the peppers and onions in the bag, tie the legs, insert the timer according to directions and retie the bag.
  6. Put turkey while still in the bag in the oven and bake according to directions. If you don't have a roasting oven, just put the turkey while in the bag in a pan and cover with foil. This will help keep the turkey tender.
  7. Preheat stove oven to 325-350 degrees. Melt the rest of the butter with the rest of the garlic. An hour and a half before it's done, transfer the turkey and the marinade to a roasting pan(remove it from the bag) or remove the foil, and brush with the garlic butter (for browning and crisp skin).
  8. Roast / Bake for the remaining time and bathe it with its juice every 20 minutes until it's golden brown.
  9. Allow it to cool down a bit (10 to 15 minutes) before carving, so that all the juices settle. Serve and garnish to your liking and use the juice for your gravy.
  10. Variations: 1.) add 2 tablespoons of brown sugar to the garlic butter for brushing for a sweet taste. 2.) Or add canned chipotle peppers in adobo sauce to the marinade and chop in food processor for a spicy flavor, sprinkle the turkey with cayenne pepper for extra spicy. 3.) Add half a jar of "salsa verde" to the marinade.

We strive to keep this list as accurate as possible. We probably  missed an item or two that is at the market or listed an item as available when it is not. Chances are that not all items mentioned or listed below will be at each market. 

 

Future Fruit Farm will be bringing pear cider, apple-pear cider, and caramel apples along with their fresh product to this week's market. We've never had pear cider, though it sounds delicious!

We picked up some garlic from Willi Lehner at Bleu Mont Dairy a few weeks back. He suggested a good way to store it is to peel the garlic, pack it in pint or half-pint mason jars, then add enough olive or sunflower oil to cover. Let it sit for a week or so and then place in the freezer. When you use it, he says, not only do you have some well preserved garlic, you also have some nice garlic-infused oil. Our jars spent a week sitting in the refrigerator before freezing, just to play it safe.

Plenty of broccoli, garlic, mushrooms, squash, and spinach at this week's market. If you haven't figured it out, yet, there's also a lot of cheese ... more cheesemakers than we featured this week. From spicy cheese, cinnamon, and flat breads, to Italian biscotti, and hearty sour dough, there are plenty of bakeries offering a variety of products at the market. Whether your taste runs sweet or savory, do check out the many excellent bakeries.

Tom Brantmeier will be bringing some of his soap to market on Saturday. He says he's been working hard on it the last several weeks.

Take the Bull by the Horns
This Sunday, November 13, from 1:00 pm to 4:00 pm, John and Dorothy Priske of Fountain Prairie Inn Farms will be hosting a unique art show. Featuring Highland cattle-themed artwork, items will include hides, skulls, photographs, puzzles, and more. For more information check it out here.

Family Farm Defenders Dinner this Saturday;
First Annual Wisconsin Forum on Rural and Urban Agriculture on Friday
Please join the Family Farm Defenders on Saturday, November 12 at the Goodman Center from 5:30 to 9:30 p.m. for an evening of great food, music and fellowship.  It is the First Annual John Kinsman Beginning Farmer Food Sovereignty Award Reception and Dinner.

The event begins with a reception at 5:30 p.m. featuring local beer and wine, local appetizers, and music by Brian Schwellinger, a musician who often entertains at the Winter DCFM.

A harvest dinner begins at 7:00 pm with much of the meat provided by Northwood Farm and many vegetables provided by Driftless Organics. The program that follows includes a talk by Jack Kloppenburg, Professor of Community and Environmental Sociology at the UW-Madison, followed by winners of the John Kinsman Beginning Farmer Food Sovereignty Award, presented by Patty Lovera of Food and Water Watch.

On display throughout the event will be photos, videos, and comments from the 2011 Prize Winners and John Kinsman, including excerpts from a recent Food Sovereignty talk by John Kinsman at the Jane Addams Hull House in Chicago, hosted by Farm Together Now editor, Daniel Tucker.

An associated event of interest is the First Annual Wisconsin Forum on Rural and Urban Agriculture, taking place this Friday, Nov. 11. More information is available at the above link.
