Dear DCFM Enthusiast,


We bought a box (eight quarts) of strawberries from Kelly Lor last Saturday at the market and by the end of the day had 15 pints of freezer jam cooling on the kitchen counter. It's the first time we've done this jam. It's amazingly simple and fast while producing some wonderfully colorful, flavorful jam. See the recipe below.

One of our favorites, broccoli is back. Carol Knapp from Knapp's Fresh Vegies says there will be plenty more coming. She also notes the squash is in the ground and coming along, despite some trying conditions.

We were in the kitchen earlier in the week with Carrie Johnson of Jordandal Farms watching (and videotaping) her prepare the wonderful frozen pasties and soups she'll be introducing at market this week. The soup looks and tastes absolutely homemade delicious. The video simply looks homemade. Carrie also mentioned that the farm is on Facebook and Twitter. Wow, geeky farmers!

Pecatonica Valley Farm, near Hollandale has introduced a new brat called the Fresh Tailgater Beer Brat. It contains extra onion and just a little more punch than your typical brat. If you haven't tried them though, all of Pecatonica's packaged products are simply wonderful. Pick up a selection to audition for the Fourth of July.

Garlic scapes and snap peas are making an appearance along with a report from Market Manager Larry Johnson that Gary Heck will have green beans. Along with their usual excellent choice of produce, Harmony Valley Farm expects to bring nasturtium blossoms and Komatsuna.

Last week Friends of the Dane County Farmers' Market held its Edible Jewelry School on the Square.This is always a hugely popular event. We thought we'd share a few photos of the event with you.

Next week Friends has another great program, "Meet the Farmer - Beekeeper Eugene Woller." More on that in next week's issue.

recipeRecipe: Strawberry Freezer Jam

We've been excited about the prospect of making freezer jam ever since the last Winter DCFM where we discovered the excellent stuff made by Julie Sutter of Sutter's Ridge Farm. Our batch of 15 pints didn't turn out as smooth nor with quite as nice a texture as that of Julie's. But it's really quite fine with a wonderfully, fresh strawberry taste. A note on this recipe. EXACT measurements are crucial to its success.

Ingredients

  • 4 cups crushed strawberries, stems removed. A potato masher works very well for the crushing. If using a food processor, pulse to chop and don't puree.
  • 3 cups sugar
  • 1 cup water
  • 1 box of "Sure Jell" or similar pectin

Instructions
  1. Wash your containers of choice. We used pint mason jars with 2-piece lids.
  2. Measure exact amount of fruit and set aside.
  3. Put sugar into large saucepan. Add Sure Jell and mix well. Add the water and mix until its integrated.
  4. Heat sugar mixture over medium-high heat until it starts to boil. Mix for one minute more, continuing the boil.
  5. Remove sugar mixture from heat.
  6. Stir strawberries into sugar mixture and gently stir for around a minute.
  7. Immediately pour or ladle mixture into your prepared containers, leaving around 1/2 inch space at the top for expansion during freezing.
  8. Seal and let sit for 24 hours until it sets. Refrigerate for up to 3 weeks or freeze for up to a year
Yield: Around six cups.

The Buy Fresh Buy Local program of the REAP Food Group is launching its Farmer Chef Collecting Cards -- a series of "trading cards" featuring local chefs and farmers who work together to bring us some memorable meals. One chef, Clayton Scherer of the Monroe Street Bistro will be passing out his trading cards this Saturday, June 20 from 10 am to 2 pm at the Fountain Prairie Inn & Farms stall.
