You asked - we listened. In response to the many requests we've had for an electronic newsletter - welcome to our first edition. We plan to send the newsletter quarterly but an "opt out" option is included - just in case.
We know there are plenty of newsletters out there so ours will be different - and amusing. If you want more information there are links to the website.

Aeolian Islands Affordable jet setting.

Once more into the breach dear friends?
Acting on the many requests we've had for us to escort another adventure to Italy, we're putting together a food & wine excursion for autumn of 2010 when the crowds have gone.
Participation will be limited to 18 or less,so that cooking lessons, olive oil & wine tastings etc can be more personal and hands on. The locations will be centered in a family estate near the city of Florence, and in either Sicily or Southern Italy. 8 - 10 days.

Alexandra's Chocolate Souffle
3 tblsp unsalted butter
2 tblsp all purpose flour
1 cup milk
2 ounces unsweetened chocolate (best you can find)
1/2 cup granulated sugar
1 tsp pure vanilla extract
4 egg yolks
5 egg whites
Confectioners sugar for finishing touch
Preheat oven to 400 degrees. Grease bottom and sides of 7 inch diameter souffle pan and dust with sugar. Turn pan upside down to shake off excess.
Make a roux with butter and flour, cook and stir gently over moderate heat until a smooth paste. Slowly add the milk, stir and cook until it thickens. Add the chocolate and sugar, stir until melted. Allow the mixture to cool and then add the vanilla and egg yoks.
In a separate 2 quart bowl, beat the egg whites until they form stiff peaks then gently fold into the chocolate mixture. Pour into the souffle dish.
Place the dish in a pan half filled with warm water (bain marie) and pop into preheated oven for 15 minuets. Reduce heat to 350 degrees and continue cooking for another 20 minutes. Remove carefully and when room temperature sift confectioners sugar over the top. Serve with brandy, custard or Grand Marnier sauce. | |
