Calabaza En Tacua

2.5 pound Pumpkin
2 cinnamon stix
Juice of 1 orange
Zest of 1 orange
1# piloncillo (may sub brown sugar)
2c water
 
Cut Stem from Pumpkin
Cut pumpkin in half and remove seeds and strings
Cut pumpkin to 8-10 sections remove skin
Cut to 2 to 3 inch chunks
Rinse and gently pat dry- set aside
 
In large sauce pan bring water, cinnamon, juice, and piloncillo to medium heat
Add pumpkin and simmer for 1 hour or until fork tender

Calabaza Cocktail
 
2 oz Tequila
1barspoon of Pumpkin butter
1barspoon of Orange Marmalade
Cinnamon stick
1/2 orange wheel
sugar
Ice
Shaker
Martini Glass
 
Put tequila, pumpkin and orange marmalade  
in shaker beat vigorously.
Set aside
 
Rub Orange along rim and dust with sugar
Strain shaker to glass
garnish with orange and cinnamon stick
 
if you do not like pumpkin you can use just the marmalade and ixnay the pumpkin and cinnamon
