This past August we introduced in our newsletter what we called the "pH Challenge".

The pH Challenge -- The Results!
 
As a reminder, HealthWise is roasted through a process that allows it to be low in acid, while still retaining many health benefits that other coffees don't possess in their roasting processes.   
 
The pH scale ranges from 0 to 14, with 0 being the most acidic and 14 being the least acidic, or more alkaline.  Pure water is around 7.0, and normal body pH hovers at slightly alkaline, around 7.4.  When a person consumes a food or beverage either more acidic or basic than his or her body pH, the body must compensate and work to bring the pH back into check.

Here is the background for the "challenge":  

  • Among well-known national brands:
    • we chose what appeared to be the challenger brand's comparable coffee; i.e. 100% Colombian if available.
    • we selected nine national brands to test, and stopped at that point as none of those tested approached the pH of HealthWise.
  • Among low acid coffees, we tested Hevla and Puroast.  
  • The pH testing device manufacturer claims a degree of accuracy of plus or minus .01 pH.
  • Each coffee's recommended amount of ground coffee was used. 
  • Natural spring water was used.
  • The test was performed in a test kitchen and not a laboratory.

Results for Low Acid Brands:
 
HealthWise                   6.18

We are calling Puroast a "tie" as it came so close to , but not above, the pH of HealthWise, that the difference was not significant.
 
The pH scale is logarithmic, and as a result, each whole pH value below 7 is ten times more acidic than the next higher number.  So Hills Bros. at 5.01 is nearly twelve times more acidic than HealthWise (6.18 minus 5.01 = 1.17 x 10).

Thanks for reading this and allowing us to demonstrate that HealthWise does have lower acid compared to other coffees.

We are delighted to announce that Roseane M. Santos, M.Sc., Ph.D., will be assisting HealthWise Gourmet Coffees.
 
Dr. Santos is the Assistant Professor of Pharmaceutical Sciences at South University in Savannah, Georgia.  Roseane is an expert in the field of coffee and health and has spent many years studying coffee, its properties and their effects.  She is the author of two books regarding coffee and is currently leading a research unit at South University, with major interest in studying bioactive compounds, lactones, niacin, minerals and their effect on human health.
 
Dr. Santos will be advising and assisting HealthWise from time to time, and we very much look forward to her participation.  
Purchasing Five or More Really Helps!
 
The HealthWise TechnoRoasting process is much more costly than any other roasting process. While we've maintained consistent pricing during the years of rapidly rising costs for high quality Arabica beans, it wasn't until this past July that we increased prices by fifty cents.  In order for us to absorb shipping costs, we need to increase prices on orders fewer than five cans, which is the level at which the USPS Priority Mail Flat Rate postage program provides economical pricing.         
 
Cans of HealthWise can be used for over one year from the date of roast while our bagged coffee has a shelf life of six months.  
 
The bottom line for this is we are asking our loyal "two-pack' customers to increase their per order quantity, and help avoid an upcoming price change for the "two-pack".  Thank you and we apologize to those who will be impacted by this price increase.  If you have a financial hardship, write us and we'll make special accomodation.
