Welcome to Rutiz Farms HAPPENINGS ON THE FARM I ( Jerry ) have been on vacation in Hawaii for the last couple of weeks ( among other things, my niece got married on Kauai..so I really do have an reason for being here )...so I need to thank my farm crew, stand crew, and wife ( Maureen ) for filling in for me and keeping everything going well ( I hope!) The pumpkin engraving was a success, but is now finished for this season...the skin of the pumpkins are now too hard and mature, so if you tried to write on them, they would stop growing and just go rotten. The raspberry u-pick is also finished for this season, but we will continue to have already picked raspberries, blackberries and strawberries available for sale at the stand.
WHAT'S NEW IN THE BOX THIS WEEK: The Italian Romano green beans are cooked up the same way as you would the regular green beans...but just give them a few extra minutes of steaming to soften them up. I think you will find these green beans to be very flavorful with lots of "character". The Tuscano kale in this weeks box can make up a tasty saute..and besides kale is one on the most nutritious veggies around! Tear up the leaves into small pieces, steam for a few minutes until "half" cooked, then transfer to a hot skillet with some oil, garlic and onions...continue cooking until everything is tender to your liking. THINGS TO LOOK FOWARD TO IN THE COMING WEEKS Our farm will be participating in the "Savor the Central Coast" event that takes place on the first weekend in October at the Santa Margarita Ranch. I will give you more details of how we will be involved in future newsletters, but it should be a fun time for all...go to their website at SavorCentralCoast.com for more info. Grass fed beef??...I recently purchased 2 young Angus steers with the hope of raising them and offering the meat to our stand customers. They are currently enjoying the pasture land out on Ron and Jenn Skinner's Huasna Valley Farm. We will keep them there for another year or so, to let them grow a bit. In the meanwhile, I am still trying to find a local grass fed beef rancher that would have some products that we could offer at the stand in the close future...I will keep you posted.

RECIPES
EASY TIPS FOR PERFECT ROASTED VEGETABLES
adapted from The Santa Monica Farmer's Cookbook by Amelia Saltsman Roasting vegetables concentrates their flavors, develops and caramelizes natural sugars, and gives them that appetizing crisped look. Best of all, the same technique works for just about any vegetable you've got on hand, any time of the year. Follow these simple steps for great results. Keep vegetables or vegetables pieces a uniform size for even cooking. Toss cleaned, trimmed vegetables with 1 to 2 tablespoons olive oil, kosher or sea salt, and freshly ground pepper. For convenience, do this directly in the pan. Always preheat the oven. Roast dense vegetables, such as beets or potatoes, at 400 degrees, quick-cooking ones, such as asparagus or tomatoes, at 425 to 450 degrees. Don't crowd the pan, or your vegetables will steam rather than brown. Large baking sheets and heatproof-glass dishes are ideal for roasting. Roast vegetables uncovered in the upper third of the oven for better browning. Halfway through the cooking time, remove the pan from the oven and give it a shake or use a spatula to loosen and turn the vegetables.
When the vegetables are browned and tender, season again with your favorite seasonings...salt, pepper, garlic powder.
If serving the vegetables at room temperature, allow them to cool before piling them onto a serving dish( so they won't steam themselves and get soft).
