Mighty Mice Cookies

These sweet little Mice are the perfect size to pop in your mouth. Your kids will so enjoy helping you create these treats by adding the tails, ears and whiskers!

INGREDIEN TS:
Bodies
- 1 cup almonds, soaked, rinsed, drained, dehydrated
- 3/4 cup dates, chopped
- 2 tsp vanilla extract (non-alcohol) or vanilla powder
- 1 tsp Himalayan pink salt
Tails, Whiskers and Ears
- 1 carrot, finally julienned
- 12 almonds
PROCEDURE:
- Combine all the "body" ingredients in a food processor, blend until smooth.
- On a dehydrator tray outfitted with a mesh sheet, put 1 tablespoon of the body mixture and sculpt into a mouse shape. Take the julienned carrot slices and form the whiskers and tail. Use two almond halves to make the ears. Use carrot for the tail ─ about 3 to 4 inches long. Cut just the tip of one of the julienned carrot to make the eyes.
- Mice are quite tasty as is or dehydrated. Dehydrate at 105 degrees for about 8 hours or until crunchy. The dehydrated Mice are a great on the go treat.
This recipe is from a Halloween e-book my friend Chef Tina Jo just came out with. I am seriously spooked by several of the recipes - including her witches fingers. These cookies actually look like fingers! They have almonds as sharp finger nails. So cool.

Special deal on DehydratorsWith the cold weather here, I bought myself a new Excalibur dehydrator. The company gave me coupon for deals on dehydrators that I can share with you. Prices start as low as $119.95. You will see that with the larger machines there are different prices. The price depends on how many Paraflexx sheets you want. I personally use the Paraflexx sheets with almost everything I make, so I like having enough for each tray. There are cheaper places to get Excalibers - like Craigslist - but they don't usually come with the 10-year warantee or paraflex sheets. I found the best value - and price - was getting mine from the company directly.

5 Tips for Enjoying Halloween - and Staying Raw
 1) When accepting party invitations, ask your hostess if you can bring a dish to share. Bring your favorite raw party dish. I recommend a kale salad. Click here for a free recipe. 2) Drink green smoothies and juices throughout the day, every day. They will fill you up and reduce your cravings for sweets. When you have less cravings, the M&Ms and other candy with crazy ingredients don't look nearly as appetizing. 3) Have a Halloween party yourself - reach out to other raw foodists to get together. MeetUp.com is a great way to find raw folks in your area. 4) Have plenty of healthy raw treats in your cupboards. The best way to avoid temptation is to not face it. Stuff your cupboards with plenty of raw snacks and staples. 5) Eat plenty of your favorite raw foods, so you don't feel deprived or needy. I find I snack when I am hungry, and I should be eating a real meal. Twice a week I spend several hours in the kitchen making staples like salad dressing, pates and dips so that I always have raw food on hand when I am hungry.
