RAW BAY AREA NEWSLETTER
Greetings!
Heather at the kitchen door
The biggest feasting day for America is just around the corner.  Are you feeling ready?  I am, because I have some of my favorite recipes right at hand.  I am bringing my family fresh, vibrant raw versions of my favorite stuffing, cranberry sauce, waldorf salad and pumpkin pie.  My sister said "wow, thats a lot of items!"  But these recipes are so quick, really I am not going to spend much time in the kitchen at all this Thanksgiving.

If you need a recipe you can make quickly tomororw, and throughout the cold weather season, see below for Mashed Notatoes and Wavey Gravey.  I even made a video to demonstrate how to make it. (It will be up on my website soon.)

If this recipe leaves you wanting more, I can still offer you a Holiday Traditions class this year.  You have 2 more chances to take it at a location near you in San Francisco and the East Bay.  These recipes will wow your friends and family - seriously!  And, they will help you keep your waistline slim. And, unlike with the traditional holiday dishes you will have plenty of energy after the meal for laughing, playing and enjoying the rest of the day.  Come with a friend or spouse to a Holiday Favorites class and receive $10 off. That's a huge savings!  See below for details.

If you are already starting to think about Holiday Gifts, I am including plenty of ideas for the budding chef.  I made my list and checked it twice.  I hope you enjoy it.

Bon Appetite!

--Heather

Mashed Notatoes with Wavy Gravy

recipes by Chef Elaina Love

This recipe is one of my favorites for keeping warm through the winter.  If you want other recipes and tips to stay rawsome all winter long, click here to register for the upcoming class.  The first 15 people to sign-up for the teleclass will receive a free Holiday recipe packet as well.

Mashed Notatoes Mashed Notatoes

2 ¼ cups peeled and chopped celery root or cauliflower
¼ cup macadamia nuts
1 Tbsp. white miso paste
1 tsp onion powder
¾ tsp salt
¼ cup Irish Moss paste (see recipe below)
1/3 cup water

To make, blend all the ingredients in a food processor until completely creamy and thick.  Serve as is, or gently heat on a stove top until just warmer than your finger.

To make Irish Moss paste blend ¼ cup soaked Irish Moss (soak it for 3 - 24 hours then rinse very well to get all sand out) and 1 cup water.  Blend on high until smooth and creamy (can take a while in the blender).  Store in the refrigerator in a glass jar (will last up to 10 days). Irish Moss is a seaweed high in minerals, especially Iodine (great for Thyroid and hormonal health). It is used in recipes as a fat substitute and a thickening agent.

Ravey Gravy
7 Brazil nuts
1 Tbsp olive oil
½ cup Irish Moss Paste
¼ cup water
1 ½ cup chopped zucchini
¼ tsp salt
2 Tbsp. dark miso
½ tsp garlic powder
½ tsp paprika
½ tsp onion powder
½ tsp dried or fresh rosemary
½ tsp lemon juice or apple cider vinegar

Blend on high in a blender until smooth

Store in a jar for up to a week in the fridge

A
Pumpkin Seed Oil time saving option:

If you are in a hurry, skip the Wavey Gravey and top your mashed Notatoes with Pumpkin Seed Oil.  It has the taste, color and texture of gravey.  I like International Harvest brand, its organic and raw.  It can be found at the Rainbow Grocery and Whole Foods Market, among other locations.  It is super yummy!
