President's Message

 

I guess spring couldn't have come soon enough for us bakers. With the bad weather behind us, we can now focus on the spring season and the upcoming holidays that are around the corner. Easter and Passover are always a busy holiday's for us, we bake many types of special baked  goods.

 

To celebrate the arrival of spring, I am going to share with you one of favorite formulas for coconut macaroons. These can be dipped/covered in chocolate, or garnished with a glazed cherry.

 

Even though we are a full year away from it, on March 18th and 19th of 2012 we will be having our EXPO in Atlantic City. The Expo committee is working very hard to make this show the best it has ever been. We hope that you will put it on your calendars and be a part of this premier baking show event.

 Coconut Macaroons

Coconut Macaroons

 

4 lb. Sugar

1 qt. Egg Whites

1 lb. Butter

1 lb. Nulomoline

Melt over double boiler

 

5 lb. Macaroon Coconut

1 cap Almond Flavor

1 cap Vanilla Flavor

oz. Salt

Mix in by machine for 5 minutes

Pipe onto sheet pans to desired size

Bake @ 375 F for approx 12 -15 minutes

New Jersey Bakers Winter Workshop 
Fourteen bakers from New York attended the New Jersey Workshop at the Tropicana Casino and Hotel Resort on March 14th. The workshop was attended with over 100 bakers and students. Many holiday items and new ideas were presented. New Jersey Bakers did a great job on this workshop.
