The Future of Catering?
Recent Catersource reader and attendee demographic surveys show that the largest percentage of caterers fall into the 35 - 50-year-old age category.

We wondered what would happen to the catering industry as it ages and seasoned pros turn to retirement or new endeavours - would we see a fall in what has been the fastest growing segment in the foodservice industry for the past 10+ years?

Kid caterers?Not necessarily! Today, not only young adults, but kids and teenagers are turning their interests toward the culinary arts. Click here to take a look at a few kids that are making their way with great success and seem to have a bright future in our industry!

And in June of 2008 Bravo announced it would be airing a spin-off of its Top Chef reality cook-off that will feature teen competitors. According to reports, "Top Chef Junior, currently in development, will fellow resident chef extraordinaire Jean-Christophe Novelli as he opens a cooking school in Los Angeles."

We've seen nothing yet, but we'll keep our eyes and ears open to watch for the young aspiring chefs - and caterers - of the future!

Monopoly ShootersAs caterers, the majority of us have, at one time or another, been asked to do some sort of boxed/bagged lunch for our client. Have you ever considered taking this boxed lunch or standard appetizer to another level by using a unique presentation and, at the same time, upselling your product to add more to your bottom line? Granted, this doesn't work for all clients but there are those who would be willing to pay more if there was some creativity involved in the presentation and food.

Creativity in food and design is in your own back yard and experience base.  All you have to do is tap into that 'brain catalog' and cull from our own every day experiences. Now that summer has arrived, it's only appropriate to discuss design and food presentation vehicles based upon what summer stands for .... fun, games and awakening the child within each of us!

Late Summer Recipes

Chef Jerry EdwardsRipe garden tomatoes, sweet white corn and juicy succulent melons are all around us this time of year. Now is the best time for great produce, but soon we will be serving those late summer parties and wishing we had the flavors from the past few months back again. As the summer draws to an end there are some wonderful recipes that can delight your guests with the memories of summer garden parties and beach gatherings that have passed until next year.

I love a good gazpacho, especially when the flavors are well balanced. This recipe for traditional gazpacho has a perfect balance of tart and sweet with an edge of fresh herbaceousness that lifts its spirit. We cook the vegetables because this time of year they may not be as sweet as they would be in mid summer and by caramelizing them we enhance their natural sweetness.
