Summer Menus Simple to Silly

Summer MenusSince I was a child, freshness and quality was always impressed upon me when it came to food. I recall my Grandfather growing his famous sweet succulent Jersey Tomatoes.
He would bend over that little tomato plant and whisper encouragement to the leaves as he flicked his cigar ashes into the soil like an artisan farmer believing that the combination of Dutch Master ashes and his loving encouragement was just the recipe for perfect fully-ripe juicy Big Boy Tomatoes.  

On Fridays, my mother would pick me up from school and we would head to the fish market and choose just the right alabaster white filet of halibut or a flat and thin filet of sole that still possessed the salty sweet perfume of the Atlantic Ocean. On the way home, we would discuss just the right preparation for that fish.

On many Sundays, my Grandmother and I would prepare a multitude of Italian classics for the family that focused on the freshness of the land and the richness of Italian family tradition.

Now that summer is here for many of us in four-season regions of the country, it is time to celebrate local and fresh ingredients. The recipes to follow showcase some regional flavors that are traditionally synonymous with summer:

Lights, Camera, Action!
For many who have seen Chef Domenic Chiaromonte in action at a Catersource conference, you know that his ideas and style are creative, unique and totally original. Right now Dominic is busy preparing to share even more ideas with an even larger audience through television, internet cooking segments and a brand new book.

Catersource is beginning production of Domenic's new book  Creating the Unexpected which will showcase dozens of his favorite recipes and creative techniques. Complete with unique and inspiring photography, Dominic will show you how to add unexpected toDomenicuches to every menu. The book is scheduled for release in March 2010 at the Catersource Conference & Tradeshow.

Chef Domenic will also be making several television appearances where he will display his creative plating techniques and recipes:
· June 30 Citytv Breakfast Television, Canada
Domenic will showcase  fresh, local Canadian ingredients with a creative edge.
· July 17 KTXL Fox40 News Morning Show, Sacramento, CA
· July 25 The Early Show (CBS), New York City

And, Domenic will also be taping four cooking segments for chow.com that display the tricks of the trade of culinary professionals. All segments will be available for download on iTunes.

Of course Chef Domenic will be back in Las Vegas March 7-11 at the 2010 Catersource Conference & Tradeshow where he will present more exciting main stage sessions and co-produce the Tuesday night party with Cade Nagy. You'll have the opportunity to get up close and personally experience some of his unique, trendsetting ideas.
