Dear Friends of Local Burger,

The essence of Local Burger is about bringing prosperity and recognition back to the farmer and rancher...the people that provide us with food (an important job).  Particularly, the producers that practice their art in a sustainable and reverent way. A way that is nourishing to the people that actually eat their food, the land, animals, local cultures and economies.
The Local Burger newsletter will feature a profile of some of the folks that supply our food, seasonal specials (check them out below!!) and events, and always an amazing coupon (that you should use so we know this newsletter is getting read!).
Local Burger wants to do better...better customer service, improved menu and we want to share what we learn about how the people that provide our food here produce, create and practice their art. 
We are looking forward to "Meet Your Farmers, Suppliers and Rancher Nights" - with free samples and demonstrations.  From wine to chocolate and pork to tofu, we want to share why heritage breeds, pasture raised, grass-fed only, organic, non-gmo, additive free, gluten free quality food can matter to all of us.
Local Burger is excited to connect you to these local food stars -  artists who are passionate about what they are doing.  They're on a journey that took them to a place where profit was not all that mattered....quality, relationships, health and culture came into the equation.  It may not be the easiest way...but for some of us it is the only way.

Focus on the Farmer

    As many of you know Local Burger is about bringing you the highest quality food and ingredients we can find, and our cheese is no exception.  Jason Wiebe Dairy has been our cheese of choice since the doors opened here at Local Burger four years ago.  Hilary recently took a trip to the family owned (three generations and going) and operated farm in Durham, Kansas, to see how the Wiebe's produce the best quality cheese.

    Twelve years ago Jason Wiebe took over the family dairy business that was started by his grandfather on the same farm they make the award winning cheese today.  The 135 cows they host are all born and raised on the family farm.  The Wiebe's understand that their livelihood depends on the quality of their milk and cheese and are constantly making efforts to improve that quality.  They use no additives and carefully test every batch of milk produced on the family farm for antibiotics.  Jason Wiebe is a State Certified Antibiotic Tester and is evaluated and certified yearly.  If a single trace of antibiotics is found in the milk or cheese, the entire batch is thrown out.  What a waste, some of you may be saying but, it is the only way for the Wiebe's to ensure their customers that they are, in fact, receiving the best quality cheese.

    Jason, and his wife Sheri, started out small in their kitchen with the Home Cheesemaker Book.  They visited several cheese making plants to expand their knowledge and even spent a day at Kansas State University watching them make cheese and receiving instructions.  After becoming comfortable with the process they began making 40 lbs at a time before expanding to their current batch size of 550 lbs. In the beginning they were only allowed to sell their cheese directly from the farm.  At the time they did not have a pasturizing system and their raw milk cheese was not aged to the standards of the FDA, and so could not sell retail. That, of course, has changed and the Wiebe's pasturize their own milk, on location and age their raw milk cheese to the standards of the FDA and are now able to sell to several Hen House and Price Chopper locations throughout Kansas City.   Customers can still purchase the cheese directly from the farm, or order over the internet through their website, www.jasonwiebedairy.com.  There are over 10 varieties including the award-winning, Eleanor's Jalapeno Cheddar.  This cheese received 2nd place in the Natural Flavored Cheese Class at the World Dairy Expo in Madison, Wisconsin in 2006.  New to their selection is a Raw Milk White Cheddar as well as several flavored varieties.

SOUP!  We have a new chef in the kitchen!  Micheal Sweeney is making some super creative, seasonal and amazing soups  - always dairy, egg and gluten free and (believe it or not) totally delicious.  Hilary said the soups he makes remind her of a favorite Van Morrison song... 'Warm Love'
