Chef Tiffany's Chili
Ingrediants: 2T Canola Oil 1 lb Ground Turkey 1 Md Onion, diced 3 Lg Garlic Cloves 1 Can (15 oz) Black Beans, drained and rinsed 1 Can (15 oz) Dark Red Kidney Beans, drained and rinsed 2 Cans (15 oz) Chili Beans in Sauce 1 Can (15 oz) Diced Tomatoes with Juice 1 Lg Can (26 oz) Tomato Puree 1 Lg Can (26 oz) Water 2T Chili Powder 1T Cumin Coarse Kosher Salt and Fresh Black Pepper to taste.
Note: You may add green chilies with sauteing the onions and garlic to give the chili New Mexican flair!
Directions: In a large dutch oven or stock pot, heat oil on medium-high heat, then add onion, garlic, and a few pinches of salt and pepper, sweat for a few minutes. Add ground meat and brown, Add canned beans, tomato ingredients, and water. Stir and continue to cook on medium heat for about 5 minutes. Add chili powder, cumin, and check seasoning. Add salt and pepper as needed. Turn heat to low and let the flavors marinade for at least an hour, stirring frequently making sure to scrape the bottom.
Serve with shredded cheese, diced onions, chopped scallions, sour cream and tortilla chips.
