Recipe of the Week
Coconut Pie Crust

Coconut Pie CrustThis amazing pie crust is wheat-free and incredibly easy to make.  Coconut is one of the most nutritious foods you can eat, so it's a win-win all around!
 
Ingredients:
1/3 cup melted coconut oil or butter
½ tsp. Celtic Sea Salt
1 ½ cups dried coconut
Dash of Amaranth or rice flour
 
Directions:
Mix coconut with butter in a small bowl. Transfer to a buttered and floured 9-inch pie pan and press firmly and evenly against the bottom and sides. Bake at 300 degrees for 30 minutes or until crust is a dark golden brown. Allow to cool to room temperature.
 
Fill with your favorite filling and enjoy!

Laura's Green Tip
 Green Goodness Blood Orange Scrub

Laura KleinUse this scrub to slough away dry skin on heels, knees and elbows using a fresh and fragrant orange.

Soothing Ingredients:
 
organic blood orange (any type of orange will work if blood oranges aren't available)
½ cup of raw organic sugar
½ cup of grapeseed oil (for normal to oily skin) or olive oil (for dryer skin)
 
Additional Tools:
 
Reuse a recyclable glass or plastic bowl or container to make the scrub.
 
Cut the blood orange in half and gently squeeze one half of the orange to release its juices into a bowl. Add the granulated sugar and grapeseed oil and stir to combine.

Using the other half of the orange, gently rub the exposed side over any dry spots on the body including knees, elbows, and feet. Follow with the orange scrub to remove dead skin. Rinse with warm water.
