Martini Accoutrements | You've Got to Try Our New "Martini Accoutrement"
If you like a great martini, Chateau du Lac is the "in" place to be. Starting immediately, our martinis will be served with "accoutrements" - a tray of exotic accompaniments depending on the type of drink, such as olives stuffed with bleu cheese, or almonds, or another kind of martini suited to greek olives, etc. Other types of fruity martinis will come with gourmet frozen fruit swizzle sticks from our kitchen. A sweet martini might come with chocolate shavings... Come by our bar and test drive our special "Martini Accoutrements" today.

A Special Little Treat - Mosca's Restaurant is so old it's a New Orleans institution. Recently, the Mosca's took a night off to dine out, and to our delight, they chose Chateau du Lac. Usually, chef-owned restaurants never provide a night off for the chef. Mrs. Mosca even told us the story of how she got married on a Friday night and on the very next night, they were both working in the restaurant. Mr. Mosca said "I told her, you marry me, you marry the restaurant." Well, the Mosca's enjoyed their rare night off so much here that they invited Chef Jacques and Paige to come over to their restaurant to enjoy the same. Now Paige has vowed to kidnap Chef one night soon so they can enjoy their own night off - even though it's very hard to ever get Chef Jacques to step out of his kitchen...

Saints games in October:
The Saints will take on the Carolina Panthers on October 3, here in town.
The Saints then make a trip to Phoenix on Oct. 10, to play the Arizona Cardinals at 3:05 p.m. The Saints travel to fight the Tampa Bay Buccaneers at noon on Oct. 17.
New Orleans will then go toe-to-toe against the Cleveland Browns on Oct. 24 at noon. Halloween night, our Super Bowl champions will face the winner of a previous Super Bowl, hosting the Pittsburgh Steelers in a national game on TV at 7:20 pm.

It's a long-time tradition for an accomplished chef to mentor culinary students. Students get to learn under the watchful tutelege of an expert chef and the chef gets some extra help in the kitchen. Because of this program, we decided to offer you, our customer, a special price on certain classic French dishes prepared under Chef Jacques' direction by our culinary students. Not necessary, but if you like, our students would also appreciate any helpful comments after you have had their plates du jour..

 LAGNIAPPE: Live Background Music for your Dinner and Cocktails on French Music Wednesdays!
Soft gypsy jazz from Les Bar-oudeurs. They are here from 6 until 9 every other Wednesday in October - currently scheduled for the 6th and the 20th.
These events are fun for singles, couples or groups after work. We have one of the friendliest bars in town. Come on out and enjoy the smooth gypsy grooves of these true Frenchmen in the beautiful bistro atmosphere of Chateau du Lac.

Mirror, mirror, on the wall reveals the best petite plate of all. $5 petite plates will continue to be served at our bar every day during football season from 5:30 onward. Chef Jacques creates these very special petite plates daily from such tasty items as scallops, escargot, shrimp, etc.
So come watch the Saints continue to win, and all the games in style at Chateau du Lac Bistro while having a petite plate.

| CHEF'S COOKBOOK | | NATURAL WOOD SEASONING
Next time you need to cook fish, consider using a cedar or hickory plank to smoke and flavor the dish. You can pick these up at many local stores, such as Whole Foods. There are many exotic woods to experiment with, including applewood, cherrywood and mesquite.
The plank can be placed in the heat on the grill, but away from direct flames. With this technique you can put away the butter and the cream, using healthier ingredients such as a little olive oil, basil, salt and pepper, etc. The seasoning of the natural wood will not only provide the most succulent taste in your food, but also fill your home with a wonderful aroma.

Chef's Project
Chef's goal is to work closely with the Louisiana Department of Education to establish healthy lunches for schools. We will keep you informed of his progress.
Paige's Project
Lycee Francais is a state charter school that has been applied for and is expected to open by August 2011. "Lycee Francais de la Nouvelle Orleans will provide the opportunity for its students to achieve both the French Baccalaureate and the Louisiana high school diploma in an academically challenging and culturally diverse educational environment. Lycee Francais students will matriculate into the finest colleges and universities throughout the world.
By implementing the comprehensive French national curriculum (recognized worldwide for its excellence) and providing the environment for students to develop the ability to think multi-dimensionally, Lycee Francais will be the first Pre-K through 12th grade French school within the universe of public U.S. Charter Schools."

We want to make special mention of what a great job Daryll Schmidt is doing managing our kitchen, and also the fine job our new manager Jeff Hirstius is doing in the front of the restaurant.
The WYES Season of Good Taste was a wonderful event. Even though Chateau du Lac sold out our available space, we still had a wait list. Chateau du Lac loves the WYES crowd.
