Recipe of the Month: Cranberry and Roasted Garlic Risotto 
Portions: 4Cranberry and Roasted Garlic Risotto
 
Serving size: 3/4 cup
 

Ingredients
  • 2 tablespoons butter or margarine
  • 3 tablespoons roasted garlic
  • 1 cup onion, minced
  • 3/4 cup Arborio rice, uncooked
  • 2 cups low-sodium chicken broth
  • 1/2 cup sweetened dried cranberries
  • 1/2 tablespoon Parmesan cheese 
 
Preparation
  1. Preheat oven to 425° F.
  2. Grease a covered casserole dish.
  3. Melt butter or margarine in a large saucepan. Add roasted garlic and onion in saucepan and cook over medium heat until soft.
  4. Add rice and cook for 2 minutes.
  5. Add broth and dried cranberries to rice mixture. Bring to a boil and cook for 2 minutes.
  6. Pour into casserole dish. Cover and bake for 30 minutes.
  7. Remove from oven and sprinkle parmesan cheese over the top. Serve immediately.

Helpful Hints:
  • Prepare roasted garlic from DaVita.com's recipe for Roasted Garlic or use bottled garlic spread.
  • Arborio rice is medium-grain rice with a high starch content. It is grown in Italy and is traditionally used in risotto recipes.

The Longer You Sit, the Shorter Your Life Span
The more Americans engage in one of their favorite pastimes - sitting around - the shorter their average life span, a new study suggests. The effect remained even after researchers factored out obesity or the level of daily physical activity people were engaged in, according to a study of more than 120,000 American adults.

Women who spent six hours a day sitting had a 37 percent increased risk of dying versus those who spent less than three hours a day on their bottoms. For men the increased risk was 17 percent. Exercise, even a little per day, did tend to lower the mortality risk tied to sitting. However, sitting's influence on death risk remained significant even when activity was factored in. On the other hand, people who sat a lot and did not exercise or stay active had an even higher mortality risk: 94 percent for women and 48 percent for men.

AAKP has partnered with Baxter Healthcare to provide 50 patient scholarships to attend the AAKP National Convention. The AAKP National Convention takes place September 2-4 in Tampa, FL at the Tampa Marriott Waterside Hotel & Marina. The Convention features educational tracks specifically designed for chronic kidney disease (CKD), ESRD (dialysis) and transplant patients. 
 
The scholarships cover the cost of a Full Convention package which includes three days of educational sessions, a Convention tote bag, souvenir t-shirt, and tickets to the First Time Attendees Luncheon, Welcoming Ceremonies and Annual Banquet.

Tip of the Month: Eating in Moderation
restaurantA kidney-friendly diet is important for good health when you have chronic kidney disease (CKD). One of the steps to eating right is eating in moderation. When you eat in moderation, you are cutting back on certain foods and taking steps that won't trigger you to overeat the items that could cause problems with your health. Here are some tips to help you eat a kidney diet without overindulging:
 
  • Use smaller plates, bowls or cups if you choose to eat a food limited in your diet. 
  • Measure your food.
  • Put limits on phosphorus- and potassium-laden foods.
  • Savor each bite.
