Recipe of the Month: Honey-Ginger Crackles |
Servings: Makes 30 cookies
Serving Size: 1 cookie
Ingredients:
- 3/4 cup shortening
- 1 cup granulated sugar
- 1 egg
- 1/4 cup honey
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 1/2 teaspoons ground ginger
- 1 1/4 teaspoons cinnamon
- 1 teaspoon ground cloves
- granulated sugar for coating
Preparation:
- Preheat oven to 325° F (conventional oven).
- Cream together wet ingredients in one bowl.
- Prepare dry ingredients by sifting flour with soda and spices in a second bowl.
- Blend dry ingredients into wet and mix thoroughly yet quickly.
- Drop in heaping tablespoons into granulated sugar, roll into balls and place on greased cookie sheet or on parchment paper, 2 inches apart.
- Bake 8 to 10 minutes in the middle of the oven, remove and cool on tray before transferring to rack.

| American Red Cross Launches Open Shelter Locator Map | | The American Red Cross (ARC) has launched their new online locator for open shelters. This is a Google map that is automatically updated every 30 minutes with open shelter locations and population information from ARC chapters around the country. This means you can search for the nearest open shelter at any time. ARC has thousands of possible shelter locations around the country and this map will now allow anyone to find shelters that are currently open because of an emergency situation. Register for AAKP's Annual Convention |
 Don't delay registering for the 37th Annual AAKP Convention. Processed Red Meat Linked To Higher Risk Of Heart Disease, Diabetes |
After reviewing worldwide evidence, U.S. researchers conclude eating processed red meats like bacon, sausage, hot dogs and deli meats is linked to a much higher risk of developing heart disease and type 2 diabetes. Unprocessed red meats (beef, lamb and pork) do not pose the same risks. The Harvard School of Public Health researchers found that every 50 gram (1.8 oz) increase in daily intake of processed meat (about 1 or 2 slices of deli meat or 1 hot dog), was linked to a 42 percent higher risk of developing heart disease and a 19 percent higher risk of developing type 2 diabetes. Most prior studies have not separately considered the health effects of eating unprocessed red versus processed meats. The results of this study suggest people should consider which types of meat they are eating in order to lower their risk of heart attack and diabetes. |
| Tip of the Month: How to Dialyze Potatoes and Other Vegetables | |
Certain vegetables have high potassium content. The following method can be used to lower potassium content in vegetables.
- Peel the vegetable and cut into small pieces.
- Soak in a large amount of water (one cup of vegetables, use 5 cups of water) for at least four hours or overnight.
- Drain the water and rinse the vegetables thoroughly.
- Cook in a large pot of water until tender.
- Drain the vegetables and prepare as desired.
