Dear Pepper Joe,

Today I made my own hot sauce using your island
recipe.I have been growing peppers for several years
now and never really new how to make my own hot sauce.
Normally I dry my habaneros in a food dehydrator and
crush em up to shake on pizza and put into chili and soups
that sort of thing.

I buy alot of differant hot sauces to try out but this
home-made habenero sauce is so good it might be
the best habenero hot sauce I have ever tasted and
I made it with my own peppers and fresh ingredients
so thanks for the great web site and recipies.

I can't wait to get started growing peppers again and
I am going to use some of your growing tips also your
web site is very helpfull.

After two weeks after sowing, I'm very happy with the germination rate of your seeds.

Peter = 9/12
Fluorescent = 10/14
Banana = 15/16
Red Slim = 11/12
Bianca = 10/10

Dear Pepper Joe,

 

You are the man when it comes to peppers so anytime I have a question you are the one I go to.

 

I have several Bhut Jolokia plants growing from seeds that I purchased from you. Unfortunately I had a miss hap at the start of the season and all of my first run of seedlings died due to not germinating them with enough light. I got a second group going and thanks to your advise they took off and I ended up with about 95% that came up so I got my peppers in the ground a little late. I have an abundance of peppers on the plants including the Bhut's but they are not ripening. Can I still expect them to ripen this late in the season, is there something I can do to help them along or do you think I will lose what is not ripe. I live in Virginia. 

 

Any help you can give would be appreciated.

Hey Don,
Thanks for the nice letter.
You can prune your plants (test it on a few plants to compare to the ones you don't prune) and leave the largest Chiles on there.  I know it hurts to prune off some limbs with flowers and tiny peppers...but then the strength in the plant goes to the remaining Bhut Jolokia Peppers and they will ripen faster.  Also, not to worry...the Green peppers are also Hot and good to eat.

Just when you have lost faith in human kindness, someone who teaches at PineStreet Elementary in Spartanburg , SC forwarded the following letter.

The letter was sent to the Principal's office after the school had sponsored a luncheon for the elderly. An old lady received a Pepper Plant at the lunch as a door prize and was writing to say "thank you". This story is a credit
to all humankind. Forward to anyone you know who might need a lift today.

God bless you for the Pepper Joe's Ghost Pepper Plant I won at your recent senior citizens luncheon. I am 84 years old and live at the Rosecrest Retirement Home.
All of my family has passed away. I am all alone now and it's nice to know that someone is thinking of me. God bless you for your kindness to an old
forgotten lady.

My roommate is 95 and has always had her own Hot Pepper Plant, but before I received one, she would never let me pick off a Chile Pepper, even when she was loaded with Chiles.
The other day her Plant fell off the nightstand and the Pot broke into pieces and the plant died.
It was awful and she was in tears. Her distress over the Hot Pepper Plant touched me and I knew this was God's way of answering my prayers.
She asked if she could have a Pepper Joe Ghost Pepper, and I told her to kiss my ass.

Hawaii Trip
Here's Pepper Joe trekking through the Rainforest in Hawaii in search of a Wild Hot Pepper.
Next month we're headed for the Dominican Republic, St. Thomas and Tortuga in Search of more exotic Chiles.

What a great find in Hawaii.  Fuduka is a 90 year old seed company with some wonderful Heirloom seeds.  We brought back many Peppers and Tomato Seeds to field test.  Also, some cool veggies for our personal garden.  Also, we have some awesome seeds from Aina Ola Seed Company as well.  This is the most fun part of my job....searching the Globe for our 2012, 2013, 2014 Seeds and beyond.

Chilehead Thanksgiving Recipes:

 

 

Geoff's Deadly Habanero Dip

 

 

About 20 Habaneros or other hot peppers
1 large onion
4 or more cloves of garlic
1/2 teaspoon of cumin
Juice of 1 lime
Salt to taste
Add everything to a food processer or blender and process to a fairly smooth paste. Use for dipping or add to your favorite guacomole or salsa for extra heat and flavor.

Crazy Tony's Italian style spinach

 1 lb. FRESH!! Spinach (mustards work great too)
2 cloves minced fresh garlic
1 tbsp olive oil
1/2 tsp sea salt
1/2 tsp dried jamaican pepper flakes(or any really hot RED pepper flakes, such as cayenne)
1 small lemon wedge
3 cups water
3 chicken bouillion cubes
rinse spinach or mustards, cut into 2 inch wide strips
boil water and bouillion in sacepan, add greens.
when water returns to a boil,turn heat to low and cook about 3 min.
Drain greens, heat skillet to med.
add oil, garlic, and pepper.
Add greens and stir fry 5 more min.
Squeeze in lemon add salt, and toss to warm bowl.
