My 91 year old Mom having a Beer at her Myrtle Beach, SC Nursing home. She was NOT happy there (she called it Prison)...so we busted her out and took her back to her Home Town in Norristown, Pa.  She is SO happy now with Family and Friends again. She's the wife of the "Original" Pepper Joe, my Dad.  Mom and Pepper Joe hosted may visitors, did many TV and Newspaper and Radio interviews  about our Hot Peppers. Her favorite shirt sez "Ask me about Pepper Joe's". 
 
 

My Favorite!
This is my favorite way to dry Hot Peppers.  They are "Pepper Joe Cayenne Peppers that are dried, then roasted in an oven on 'Broil'...VERY briefly, until they turn Darker. I love them with Chicken Soup, Pasta, Chili, Eggs, etc.
 
Pickled Jalapeno Peppers.
Some of the best Hot Peppers are still the good old basics.  Like the Jalapeno.  With it's thick and juicy skin, it is still the best (along with the Cherry) to put up for the Winter.  Also fantastic for Freezing!
I use recycled jars and then
I add 1/3 Water, 2/3  White Vinegar (I'll add 2 tbs. Apple Cider Vinegar too for Flavor and Nutrition), a little Sea Salt and Turmeric.  I'll toss in a few cloves of Garlic for that extra Zing.

I love to Roast Garlic.  First, slice the top off of the whole bulbs. Then just drizzle on some Olive Oil, Parmaesan Cheese and Salt and Pepper.  Push those delicious cloves out and add to anything. I like to eat them just like that.
 
Roasting Jalapeno Peppers.  Cool Chile Holder, huh?  You can just lay them on their sided in a Pyrex dish.
We stuff them with Pepperoni and Sharp cheese.  WOW....you'll never order them in a restaurant again.
 
 
Try Black Tip Shark Blackened with Pepper Joe's Ghost Peppers added.  Wow....Jaws, there is poetic justice.   :)
 2010 Garden updates 
I've received 1,000's of Emails from Customers this season.  I'm proud to say I answered every one. We solved issues together like Garden Pests, Plant diseases, Watering and fertilizer amounts and recommendations, etc.
The #1 biggest problem?  Actually it was my "impatient  Gardening Friends".  :)   Will my green peppers turn another color? YES.  Can I eat the Peppers that are green?   YES.  When will they turn red or another color?  EVENTUALLY.  Many fellow gardeners did get an earlier crop by over-wintering Pepper Plants or growing some in Containers.  The soil heats up faster.
But most mail was about huge success stories and great pictures.  Common themes were High Germination rates, Large Harvests, Delicious Chiles and envious neighbors.  Also, many fellow Chileheads delighted in taking their Hot Peppers...especially the Ghosts...to that guy that 'Can't get them hot enough'.  Well they DID with the Ghost Pepper.
I'm always thrilled that in spite of Weather, Garden Pests, Soil Conditions, Too much or too little rain, etc. most of our Customers report a great year.  It just goes to show you it's not luck, but how you garden.  For some great growing tips go to http://www.pepperjoe.com/faq

See I'm on a Mission to Marry our Hot Peppers with Sweet Peppers.  They go together so well, like Bacon and Eggs....or Romeo and Juliet.  One of my favorite dishes is to fry Sweet Peppers with Olive oil, Garlic, Parsley and Chiles.  I eat my Fried Peppers with Veal, Chicken, Pork, etc.  I love to scramble a few eggs over the.  Mmmmm.  
Here's my Stuffed Bell Peppers. I lighten up my recipe by using Ground Turkey and Pork Mixed with Cooked Rice and Wild Rice.  Those are Cherry Tomatoes...from Penny's Tomatoes of course... http://www.pennystomatoes.com The Cherry Tomatoes have whole garlic and red onion along side of them....kept in place with toothpicks.  I cooked these in a Crock Pot although the Oven will do fine.

I'm a long time pepper fan, who stumbled across your website last year, and darn glad I did.  I purchased a few varieties of your seeds a few months ago, and started them just a week and a half or so ago.  I must say, I am more than pleased with the results so far. (Please see attached pictures.)  I would like to thank you for the high quality seeds.  I have grown pepper in the past from plants purchased locally, so this is my first time with seeds,  I am super excited and can't wait for summer to see the "fruits of my labor".  I am looking forward to making more varieties of pepper jellies, (started that 2 years ago), and hot sauces with my new peppers.  I made some Atomic Cherry Bomb jelly last fall from the bumper crop of Caribbean Reds that I had that was truly HOT.  Hoping that the White Habaneros and Bishops Crown that I got from you produce the same results.  Thanks also for bringing a little summer into my dreary St Louis winter.  I will let you know how my crop turns out.  Thanks, yet again.

Pepper Joe, I just got and read your latest newletter. The one about snow.

In it, you mention that people with clay soil should add sand. You might want to research this a little more. I feel this recommendation is one of those that gets passed around as assumed gardening dogma, when in fact it is wrong.

Clay+sand= bricks. That's right, that's basically the recipe for bricks. Organic matter is actually not just for sandy soils, it also opens up loose soils. More importantly, the calcium to magnesium ratios and levels are the #1 thing to address. Clay soils can be opened up if the calcium is at the proper level. Clay soils are hard or tight when calcium is lacking or is at a level below magnesium.

When organic matter is added to clay, life is brought to the clay, and all the microscopic entities go to work breaking down that clay. The humus aggregates the clay and keeps it from packing tight. This process is much faster when the OM is blended into the clay versus just layering it on top. The biggest boost probably coming from the fact that oxygen is introduced into the soil when the ground is broken up to add the OM.

Here is an excerpt from a great article on soil prep:

 "While organic products help greatly in holding moisture, and somewhat in increasing drainage, something more is needed in poorly drained soils. My preference is a material called pea gravel or #78 washed stone. This small washed gravel is spread over the newly tilled bed to a depth of 1/2 inch. The material is then tilled or spaded into the bed to help create the ultimate in permanent aeration. There are a number of new materials on the market to serve similar purposes including chicken grit, isolite (very expensive), and my favorite Stalite. Stalite (marketed under the name "Perma-till" is an expanded (popped like popcorn) slate material which looks like pea gravel but each particle is filled with air space.

Many gardeners have tried to use sand to accomplish the same results of adding drainage, but often wound up with disastrous results. In a clay based soil, sand and clay particles tend to interlock, resulting in a soil with much worse drainage than before. Here in North Carolina, the combination of clay and sand has made us the national leader in brick production. Only when a sand/clay mix becomes more than 70% sand, does drainage improve. The only exception is very organic soils. In these soils, a coarse washed sand will benefit the mix.

Some excellent points.  I should have elaborated more.
Probably mixing FINE sand with clay would be a disaster.
When I lived in Baltimore in my first home, I had a nightmarish yellow Clay. NOTHING grew in it.
I had fantastic gardens 2 short years later...I added COARSE Sand...which had very large sand particles..maybe with similar results to Pea Gravel..and a ton of Shredded leaves.
It was amazing how the garden went from "Zero to Hero" in a short amount of time.

Your seeds are doing great in our homeless shelter garden..I have enclosed a picture of some of the guys who are for the most part...Vets who served their country with honor..We get many closed doors when we ask for things...You have a special place in our hearts...You have a lot of homeless guys praying for you and your business to be blessed.I will send you garden pictures of your product soon..God bless you for all you do...
