Recipes

Here is an easy and healthful nut butter cake recipe from Denise at Naughty Nutty Love, who makes the artisan nut butters.

Easy Nut Butter "Cake"
1 ripe Banana.....Mashed
1 Egg
2 Tbls. Cocoa powder
2 Tbls. Natural Almond or Peanut Butter
(Additions if desired: raisins, flavored chips, nuts...experiment!)

Mix all ingredients together,  and microwave 2 minuntes.
Comes out like cake.

Crispy Kale with Shiitakes and Scallions

Courtesy of Charlestown Farm.  You can see photos of the recipe here.

Ingredients:

1 tbsp. grape seed or canola oil (or some other neutrally flavored oil)

1 bunch kale

4-6 shiitake mushrooms

2 scallions

˝ tbsp. soy sauce

˝ tbsp. rice wine vinegar

light drizzle of toasted sesame seed oil

Directions:

  • Coarsely chop the kale greens - don't worry about if you get a bit of stem in there (it'll just have more crunch)
  • Slice the shiitakes and scallions
  • Set a heavy bottomed sauté pan on high heat on the stove and pour in ˝ tbsp. oil
  • After a few seconds, pour in the shiitakes into hot oil and sauté until they begin to brown - a few minutes
  • Push the shiitakes to one half of the pan and pour in the second ˝ tbsp. oil
  • Put in the kale and let it sit for a second or two so that it begins to crisp
  • Then start to flip the kale and mix in the shiitakes
  • After a minute or so, pour the kale and shiitakes on your plate
  • Sprinkle on the scallions
  • Mix the soy sauce and rice wine vinegar and pour over the kale
  • Drizzle on the toasted sesame seed oil and enjoy
