It feels almost like spring today, but we have our next Winter Market at Phoenixville this coming Saturday, February 25th, from 10am to noon. You will find all of the producers set up together in the upper section of the Market in the gravel area. The weather may not be as lovely as it is now, but don't let that stop you from bundling up and coming out to get your great LOCAL food. Artisans Cafe will have lots of great hot drinks to warm you up, Pureblend Tea will have hot matcha teas, and St. Peters' Bakery will have hot soup.
If you've are running low on LOCAL wine, stop by Paradocx Vineyard's stand. You can pre-order if you want to make sure you get what you want. Order information is in their section below.
It's kidding season at Shellbark Hollow Farm and they have raw goats milk available by pre-order.
Jack's Farm is taking a break this week, but will return on March 10th, as will Forks Farm, Ridge Valley Farm (Maple Syrup) and Neil's Sharpening Service. Neil comes to us on the 2nd Saturday of each month.
Country Time will be taking orders for Easter Hams. They will be ready just in time for our SPECIAL Pre-Easter Market on April 7th. We will have more information about this market in the coming weeks
Many of our producers take pre-orders for this market and Backyard Bison sells by pre-order only. If you don't want to miss your favorite goodie, please read each producer's listing below.
Don't forget to read this email to see what is available, make your list, contact the farmers to place your orders, and then come to our regular location between 10 am and noon on Saturday to pick up your delicious, local food. You might even see your neighbors and market friends!

Baues' Busy Bees Dave & Rosemary Baues
Rosemary and Dave will have items for sale but also would love to have pre-orders.
We'll have raw honey in 8 oz and 12 oz plastic bears; one pound jars in both plastic and glass and 2 1/2 pound jars. We'll also have bee pollen, a great high protein food supplement and it does help with pollen allergies. Spring is already here because Maple trees have started to bloom! We'll have all of our creams, lotions and balms made from beeswax and our honey soap. We'll bring an assortment of beeswax candles. Dave and Rosemary Baues have been beekeeping since 1999. The honey they harvest is raw - they only strain it to remove the wax.

Barbara Shelly brings organic poultry, sausages, broths, chilis and eggs to market. Her chickens and turkeys are raised in an open pasture without the use of antibiotics or any other chemicals. Wild for Salmon is a local business that provides fresh/frozen wild Alaskan sockeye salmon at a common good price. Wild for Salmon is owned and operated by Steve and Jenn Kurian of Bloomsburg, PA.
The salmon is caught by Jen and Steve in Bristol Bay, Alaska, during the months of June and July and brought home to be sold at farm markets, restaurants and health-food stores. Pre-orders are highly recommended.

It was great to hear the radio story about KALE today on NPR! You can listen to it here and get the recipes that were featured. Kale is one of the most healthful vegetables and it is great to see it finally getting the attention it deserves. EAT MORE KALE!Here is an easy way to enjoy Kale with some of the great sausage available at the Market!Sausages with Kale and White Beans Ingredients
- 1 large bunch kale (1 1/4 to 1 1/2 pounds)
- 4 garlic cloves
- 1 pounds any farmers' market sausage of your choice
- 2 tablespoons olive oil
- Coarse salt and ground pepper
- 1 can (15 ounces) cannellini beans
- 2 tablespoons white-wine vinegar
Directions
- Remove thick stems from kale and discard. Coarsely chop kale; wash and dry. Peel and thinly slice garlic.
- Heat broiler, with rack set 4 inches from heat. With a fork, pierce sausages all over; place on a broilerproof rimmed baking sheet. Broil, turning occasionally, until browned and cooked through, 8 to 10 minutes.
- While sausages are cooking, heat oil in a large skillet over medium-high. Add kale, garlic, and 1/2 cup water; season with salt and pepper. Cover skillet and cook, tossing occasionally, until kale is wilted and tender, 10 to 12 minutes. Drain and rinse beans; add to skillet along with vinegar. Cook uncovered, tossing gently, until beans are heated through, 1 to 2 minutes.
