Hello Market Shoppers!
Happy 2012! It's been over 2 weeks since our last market and if you are like me, you may be longing for fresh mushrooms, winter veggies and some of your favorite cheeses and meats. Luckily, you can stock up on delicious local food at the first Winter Market of 2012 at Phoenixville this coming Saturday, January 14th! For those of you who are new to the Market, our Winter Markets are from 10am to noon on the 2nd and 4th Saturdays of the month. You will find all of the producers in the upper section of the Market in the gravel area.
We hold these markets to provide shoppers with local food all year and give farmers a way to sell their delicious products. The best way to make sure that you don't miss any of the great items that will be available is to browse the entire email below. We allow farmers to pick their own method of selling; some bring only pre-ordered items while most bring a variety of products for sale on a first-come-first-served basis.
Over the holiday, I watched an incredible Tedx talk that made me realize how important the Market is for our health. Here we can get great local vegetables, seasonal fruits and wonderful pasture raised meats and eggs that are full of healthful nutrients. When you have the time, (18 minutes- that is the TED Talk format) take a look at this inspiring story. And then make sure you stock up on greens, soup bones, salmon, mushrooms, and pasture raised meats at the Market. We have included a few healthful recipes in our recipe section. Feel free to post your own recipes on our Facebook Page or email them to us at info@phoenixvillefarmersmarket.org.
Don't forget to read this email to see what is available, make your list, contact the farmers to place your orders, and then come to our regular location between 10 am and 11:30 am on Saturday to pick up your delicious, local food. You might even see your neighbors and market friends!

Barbara Shelly brings organic poultry, sausages, broths, chilis and eggs to market. Her chickens and turkeys are raised in an open pasture without the use of antibiotics or any other chemicals. In addition to grass, the chickens and turkeys are fed organic grains, vitamins and minerals. All the sausages are made with sea salt, unrefined sugar and organic seasonings.
Happy 2012!! Too start the winter of right Id like to off everyone $2.00 off on a whole chicken. Roasting a bird low and slow in an oven with vegetables is a wonderful way to warm up your kitchen. The eggs will also be plentiful and as always fresh, so don't be shy about buying enough to last for two weeks. We are the producer so freshness is never an issue. And during these months when grass isn't plentiful, dried & ground up alfalfa is in their diet so nutrition & wholesomeness isn't an issue either. While stocking up can be costly, I will discount your eggs as follows: Buying 4 dozen or more will reduce your cost to 4.50 per dozen. So 4 dozen will be $18.00 instead of $19.80, a savings to you of $1.80. As for the rest of my menu we will have everything, just a few select items are low come early too get your favorite. Wild for Salmon is a local business that provides fresh/frozen wild Alaskan sockeye salmon at a common good price. Wild for Salmon is owned and operated by Steve and Jenn Kurian of Bloomsburg, PA.
The salmon is caught by Jen and Steve in Bristol Bay, Alaska, during the months of June and July and brought home to be sold at farm markets, restaurants and health-food stores. Pre-orders are highly recommended.

Recipes
Veal StockDon't be intimidated by the thought of making veal stock- it is really easy and absolutely DELICIOUS. You can get recipes with photos and commentary from Michael Ruhlman here Chinese-Style Spinach and Mushroom Soup
Ingredients:
- 2 14 1/2-ounce cans chicken stock
- 1 1/2 cups water
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar or apple cider vinegar
- 1 tablespoon oriental sesame oil
- 1 tablespoon minced garlic
- 1 tablespoon minced peeled fresh ginger
- 2 cups thinly sliced shitake mushrooms (about 5 ounces)
- 1/2 pound firm tofu, cut into 1/2-inch pieces or 1 chicken breast, sliced into bite-sized pieces
- 1/2 lb fresh spinach
- 3 green onions, chopped
Directions:
Combine first 7 ingredients in large saucepan. Bring to boil over medium-high heat. Add mushrooms and simmer until mushrooms are tender, about 5 minutes. Add tofu (or chicken), spinach and green onions and simmer until spinach wilts and tofu is heated through(or chicken is cooked), about 2 minutes. Season soup to taste with salt and pepper. Ladle soup into bowls and serve.

Kale and Chickpea Soup
Ingredients:
- 1 medium onion, chopped (1 cup)
- 2 garlic cloves, chopped
- 1 bay leaf
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons extra-virgin olive oil
- 1 large boiling potato(3/4 lb), peeled and cut into 1/2-inch pieces
- 3/4 lb kale, stems and center ribs cut out and discarded, then leaves very finely chopped in a food processor (4 cups)
- 3 1/2 cups chicken stock
- 2 cups water
- 1 (14-oz) can chickpeas, rinsed and drained
- 1/4 lb Spanish chorizo (cured spiced pork sausage), casing discarded and sausage cut into 1/4-inch dice (1 cup) (If using fresh Chorizo from Country Time Farm, remove it from its casing, break it into small pieces,and cook it in a frying pan until cooked through)
Directions: Cook onion, garlic, bay leaf, salt, and pepper in oil in a wide 4- to 6-quart heavy pot over moderate heat, stirring frequently, until onion and garlic are softened and beginning to brown, 5 to 7 minutes. Add potato, kale, broth, and water and cook, partially covered, until potatoes are tender, 15 to 20 minutes. Reduce heat to low, then add chickpeas and chorizo and gently simmer, uncovered, 3 minutes. Discard bay leaf and season with salt and pepper.
