Our next Winter Market will be this coming Saturday, February 12th from 10am to 11:30am, and we will have lots and lots of great food including Chocolates from John and Kira's!   You will find all of the producers set up in the upper section of the Market in the gravel area.

Mountain View Farm is running some poultry specials this week, ICED By Betsy is taking orders for Valentines' cupcakes, Shellbark Hollow is making special heart shaped chevre, Pure Bleand Tea is selling ALL teas at:buy 1oz. get 1oz. free,
and Pure Scents is making some special candles with great names like "Love Spell." To make sure that you don't miss any of the great items that will be available, make sure you browse the entire email below.  Farmers pick their own method of selling at Winter Markets; some bring only pre-ordered items while others bring a variety of products for sale on a first-come-first-served basis.

This past weekend, many of our farmers gathered at the annual PASA (PA Association for Sustainable Agriculture) to share ideas, listen to experts speak about various farming techniques and issues, and get their batteries recharged for a new season.  You can read a little about the conference at the end of this newsletter.  We also have some great recipe links and the end of the newsletter too!

Sweetwater Baking Company is offering a series of bread making classes in the coming months.  Look for information below.

Artisans Gallery & Café has entered into a series of partnerships with local suppliers and vendors to offer a variety of products which will benefit both the economy and support local and global charities. 

One Village Coffee has roasted a wide variety of sustainable & certified specialty coffees exclusively for Artisans Gallery & Café.  A percentage of the revenue generated from the purchase and roasting of these coffees will be used to support the following charitable initiatives;

- Work with coffee farmers in Nigeria to build 8 wells that will enable crop irrigation and supply clean drinking water for their communities.

- Assist The MAMA Project's 2008 Deworming Campaign in Honduras by providing vitamins and education in healthy living for 8 new children every day.

- Provide the means for 80 children to attend educational centers in Cairo, Egypt through our partnership with Stephen's Children.  These educational centers offer health programs, meals, and schooling for those living in the garbage dumps of Cairo.

The salmon is caught by Jen and Steve in Bristol Bay, Alaska, during the months of June and July and brought home to be sold at farm markets, restaurants and health-food stores. PASA Conference
 

Last week and weekend, over 2,000 farmers and local food advocates gathered in State College to learn how to make their operations even better than they already are.  I have been to the conference for 8 years now, and I am always amazed and uplifted to see the great care that the farmers give to their chosen profession.  There were lectures on pasture management, new methods of rotational grazing, organic weed control, breeding livestock to thrive on grass, raising pastured poultry, cheesemaking, and much much more.  All of the farmers, who rarely leave their farms, took precious time away so that they can be better farmers.  Some of our own farmers shared their wealth of knowledge by giving lectures to other farmers.  They are:  Paul Crivellaro, Country Time Farm, Donna Demchur Levitsky, Shellbark Hollow Farm, and John Hopkins, Forks Farm.

Quick Veal Cacciatore

1/3 cup all-purpose flour

Four 4-oz. veal cutlets, pounded 1/4 inch thick*

Kosher salt and freshly ground black pepper

2 Tbs. extra-virgin olive oil

1 Tbs. unsalted butter

1 small yellow onion, chopped

2 medium cloves garlic, minced

8 oz. sliced cremini mushrooms (3-1/2 cups)*

1 cup canned diced tomatoes with juices**

1/2 cup dry white wine

1-1/2 tsp. chopped fresh rosemary*

  

Put the flour in a wide shallow bowl. Season the cutlets all over with 1 tsp. salt and 1 tsp. pepper. Dredge in the flour and shake off any excess.

 

Heat the oil in a 12-inch skillet over medium-high heat until shimmering hot. Working in batches if necessary, cook the cutlets until dark golden-brown, 1 to 2 minutes per side. Transfer to a large plate as they finish.

 

In the same skillet over medium heat, melt the butter. Add the onion and garlic and cook, stirring often, until softened, about 3 minutes.

 

Add the mushrooms and cook, stirring occasionally, until they release their liquid and it reduces to a glaze, about 5 minutes. Stir in the tomatoes, wine, and rosemary. Bring back to a simmer, scraping up any browned bits from the bottom of the skillet. Reduce the heat to medium low and simmer until the sauce is thickened, about 7 minutes. Season to taste with salt and pepper.

 

Add the cutlets and any accumulated juices to the sauce and cook until heated through, 1 to 2 minutes. Serve immediately.
