Kimberton Hills Dairy
Organic Raw Milk

I spoke with Stephanie Christo, a member of the 12 person team at Kimberton Hills Dairy, a part of Camphill Village in Kimberton. Since 1973, a ninety head herd, composed mostly of Brown Swiss and Milking Short Horn cows, has grazed a 300 acre tract of land, enjoying long, healthy lives, usually about 20 years.  According to Stephanie, two cows at Kimberton Hills Dairy are currently enjoying their retirement.  The "retired" cows graze with the rest of the herd acting as babysitters.  They teach the calves which weeds to eat and which to avoid.

Compare that to the short, diseased existence of a dairy cow at a factory-farm, commercial dairy. Cows there are confined in stalls, injected with antibiotics, fed grain, and have their newborn calves torn from them a week after birth. Those poor cows survive for only 4 to 5 years.

Stephanie and the team at Kimberton Hills Dairy create a great life for the cows, and great milk for you. If you haven't tried raw milk yet, you should. For a great primer on the subject, I recommend the following article, www.nourishedkitchen.com/drink-raw-milk .  Creamy in texture, rich in vitamins, minerals, and food enzymes that promote easy digestion of foods, raw milk is a complete meal on its own.  Forget those expensive powdered energy drinks and bland protein bars.  According to Randolph Jonsson, a nutrition consultant and webmaster for www.raw-milk-facts.com, "Clean raw milk from pastured cows is a complete and properly balanced food. You could live on
it exclusively if you had to (1)".

To purchase healthy, fresh, delicious milk that is humanely and locally produced, stop by Kimberton Hills Dairy's booth at the Phoenixville Farmer's Market, located under the bridge.  Stephanie Christo will be happy to answer your questions and provide you with a healthy, delicious food staple that is a panacea for many of the lactose intolerant.

Recipe

Maple BBQ Grill Sauce

1 1/2 c. maple syrup
2 tbsp. chili sauce
2 tbsp. vinegar
1 1/2 tbsp. minced onions
1 tbsp. Worcestershire sauce
1 tsp. salt
1/2 tsp. dry mustard
1/8 tsp. pepper

Mix together and marinate your favorite chicken, pork, bison, or beef and cook as desired.  This recipe works well on the grill, but be sure to keep the heat on low so the sugars don't burn.  Enjoy!

Birgit's Amazing Carrot Ginger Salad Dressing

2 Carrots
1 1/2 " piece of ginger
1 small or 1/2 large onion
1 clove garlic (optional)
1 tbsp Miso
2 1/2 Cups Olive Oil
1/2 cup tamari
1/2 cup apple cider vinegar
1 tbsp lemon juice
1 tbsp of a tomato product, like ketchup or tomato sauce

Blend in a Blender and store in the fridge.  It is delicious!!
